We started as pop-ups in March. Opened our space in November. Just two of us, showing up every single day, learning, failing, trying again. Consistently pouring everything we are into this.

Rosca isn’t just bagels. It’s our abuela’s kitchen, our mamá’s recipes, the streets of Pilsen, the smells and flavors of Mexico that made us who we are. Every bite is a piece of home, a story, a memory we get to share with our community.

Seeing Rosca recognized is humbling. But more than that, it’s proof that when you honor your roots, your culture, and the people around you, something beautiful can grow.

This is for our community. For our people. For the culture. And this is just the beginning.

Never in my wildest dreams did I imagine this.
Just a kid from Chicago, raised by parents who taught me the value of hard work, sacrifice, and showing up every single day.

Tomorrow, Rosca will be LIVE on FOX 32 at 12:45PM.

I’m incredibly grateful…for my parents, for my roots, for this city, and for everyone who has believed in Rosca from the very beginning. From baking out of my condo to pop-ups, early mornings, and late nights… this moment belongs to all of us.

Chicago raised me.
Pilsen shaped me.
And I carry that pride into everything I make.

Because of the live segment, we’ll be closed tomorrow (Thursday 1/8). I hope you’ll tune in, share the moment, and celebrate with me.

2025 is a year I’ll carry with me forever.

Quiet mornings, long nights, tired hands, familiar faces, and new ones who felt like family. Rosca didn’t grow because of one moment, it grew because of hundreds of small ones stitched together by love, care, and patience.

To the community that shows up, shares kind words, and trusts us with your mornings and traditions, thank you. You gave Rosca a home.

To my friends and family, thank you for believing in this even when it didn’t make sense, for the rides, the late nights, the helping hands, and the honest encouragement. To my parents, for teaching me love, consistency, and hard work, and to Ari, for being my anchor and my belief…you are part of everything Rosca is.

Rosca comes from where I come from, from kitchens filled with warmth, from food made with intention, from culture, memory, and care. Every bagel carries that story forward.

2025 humbled me, stretched me, and reminded me why I started. From the bottom of my heart, thank you for walking this road with me. This doesn’t exist without you, and we’re just getting started. 2026 has even more in store.

Meet Ari…the other half of Rosca.

There are parts of this story the world will never see…
the tired nights, the quiet doubts, the mornings so early they almost break you.
But Ari was there for all of them.
Not just standing beside us,
holding us.
Holding the dream when our hands were too shaky,
holding the hope when it felt too heavy to carry alone.

Rosca didn’t begin with confidence.
It began with two hearts whispering,
Maybe we can do this.

And Ari is the one who turned that whisper
into something this community could feel…
warmth at the door,
laughter in the rush,
a familiarity that makes strangers feel like neighbors.

If Rosca feels like home, it’s because she made it one.
If it feels like community, it’s because she opened her heart first.
And if we’re still standing,
still rising,
it’s because she never let us fall.

Ari is the other half of Rosca…
the soul of our mornings,
the softness in the chaos,
the reason this dream didn’t just survive,
