We started as pop-ups in March. Opened our space in November. Just two of us, showing up every single day, learning, failing, trying again. Consistently pouring everything we are into this.
Rosca isn’t just bagels. It’s our abuela’s kitchen, our mamá’s recipes, the streets of Pilsen, the smells and flavors of Mexico that made us who we are. Every bite is a piece of home, a story, a memory we get to share with our community.
Seeing Rosca recognized is humbling. But more than that, it’s proof that when you honor your roots, your culture, and the people around you, something beautiful can grow.
This is for our community. For our people. For the culture. And this is just the beginning.
