Hiiiii. We’ll be this Saturday starting at 10 AM for a café pop-up in one of our favorite neighborhoods — Albany Park!

We’ll have cake, cookie boxes, and a limited selection of café pastries on deck.

I had a chance to visit for a morning sip the other day, and the space was so beautiful and filled with warmth and life. Chicago really needs a place like this. I can’t wait to see y’all there.

I want to say so much about this whirlwind of a dinner and collaboration we called Sukeban. I will focus on my biggest learning about community and food instead.

Coming into community with people around food is just about one of the most intimate things you can do with strangers and friends. I don’t mean going to an award-winning restaurant to practice a form of escapism or culinary tourism. And I don’t mean that cup of noodles you heat up frantically in between breaths because you have 5 minutes to eat and survive.

I specifically mean the act of making food for people who trust you. I mean the act of asking other people to exchange their energy for yours. I mean trusting yourself and whoever you’re working with to take the trust and energy of your guests and to translate that into wonder and sustenance and care.

I participated in Sukeban because I recognized the expertise of the people I’d be working with. I surrendered my heart to it because I chanced that there might be an opportunity to forge deeper relationships with people — both collaborators and guests — in a time where I hope humanity can break the chains of individualism, “excellence”, and isolation. I came out of it feeling more honest with myself and others than I could have imagined.

I walked away with awe and renewed hope for whatever is to come.

Thank you to everyone who was there. We can only make it through together.

Dairy-light cĂ  phĂŞ carrot cake. No milk products in the sponge or frosting.

Coconut milk and a little butter extract made for a very light, whipped buttercream, which reminded me a little bit of candy corn.

A little spin on the most popular cake flavor coming out of the studio.

Most recent pastry box, plus ghosts of pastries past. Kinda wild watching my own growth these past 3 years. It takes years of study and practice to get a recipe right, but when you get there, it’s *chef’s kiss* 😘

Just a few days left to order a pastry box or cake for pick up on 11/22 or 11/23. Smash that link in bio.

Good morning, bbs. I hope this brings some color, warmth, and light into your day.

I got quite a few cakes commissioned for sisters and wives this month. It seems that women and young girls are really out here being spoiled by the people who adore them? I love that for y’all.
