So many have asked about our buttermilk biscuit recipe so here goes:

7 1/2 cups AP flour
1lb of unsalted butter (4 sticks)
1/2 cup sugar
1 tablespoon salt
1 tablespoon baking soda
1/4 cup baking powder
1 quart buttermilk

Did you know biscuits originate from Appalachia in the early 1800’s? They are well loved for generations.

In a large bowl mix all the dry ingredients. I like to use a whisk to ensure all the dry ingredients are well combined.

Cut butter into small chunks and move around to ensure they are covered in flour.

Using a food processor or your hands work the butter into the dough until it is the size of small pebbles. I like to use my hands as my mind wanders and I feel more connected to the result. Make a well in the middle of the flour and pour in the buttermilk. Using a spatula or your hands turning the bowl gently combine until you have a ball. So important do not overwork the dough! Stop when you have just a few crumbs at the bottom of the bowl. You still want to see the butter as when it makes the melted butter will leave behind little pockets of air.

On a well floured surface, turn the ball out onto your counter, dust with flour and with your hands or a rolling in gently roll out until about 1” high.

I like to use my old yardstick to mark lines and then cut with my bench knife. You can cut circles, really any shape you want. Shown here, we get 18-20 3” x 3” biscuits.

Whisk 2 eggs & heavy cream together. With a pastry brush paint the tops of the biscuits.

Bake in a preheated 350F oven for about 25 minutes turning once 1/2 way through.

The bacon, egg & cheese. Over the better part of 7 years we have sold more than 30,000 of these sandwiches.

So what goes into this sandwich?

A farm fresh egg. We use wonderful free range brown eggs from Feather Ridge Farm.

Feather Ridge Farm provides all natural eggs fresh from The Hudson Valley with no antibiotics, no hormones, no byproducts, and all vegetarian feed. Their free running roasting chicken are free of antibiotics and hormones. Feather Ridge Farm maintains the highest standards as only a caring family farm can. We are grateful to the Bogdanffy family for all their support.

We fry the egg over medium in olive oil and season with our house made goodness seasoning that includes salt, pepper, garlic powder & thyme.

The bacon is thick cut, 6-8 slices a pound and applewood smoked. We have always believed in proper bacon that you need to chew. We bake it so it has a good chew and caramelization. Very expensive bacon, but it really makes a difference! Even when times have been thin, we have stayed with this thick cut bacon.

White American cheese, melted, nothing fancy for a humble breakfast sandwich.

A Kaiser roll. We like this roll as it toasts well on the griddle with butter, warms nicely and has a flavorful, pillowy texture which holds the bacon fat and egg yolk.

A little bit of unsalted butter goes a long way to adding a nice toasted, buttery flavor.
