The bread shop is broken in, but certainly not broken.

Paint chipped away from the floor where we stand most often to shape, ceilings stained from oven steam, dishwasher panel set off to the side and counters covered with ingredients measured for our next mix day.

Another Tuesday in bread land cranking out bagels and bread for the most wonderful community here in Charlotte while we continue to inch forward towards bread shop 2.0. Two steps forward, one step back, but always with a fresh everything bagel in hand :)

We’re incredibly thankful for the opportunity to bring bread into your homes and lives.

Sammy asked for a donut on her birthday which is why there were donuts on the menu today. What began as a lowkey request transformed into a jubilant, chaotic, joy-filled, music blasting morning in bread land converting our kitchen into donut land once all the bread had been baked off.

Robby showed up ready to rumble in full donut attire, Kait got to paint chocolate on donuts which deeply fulfilled the inner artist in her and I attempted to fry 400 donuts while simultaneously capturing content on the Sony a7…ambitious & questionable go hand in hand around here.

Happy birthday to our sweet Sammy and happy Friday to all our wonderful customers who snagged donuts and bread today! We’ve got an action packed next week: bread, bagels, buns, babka & pizza dough. Menu is live.

Special shout out to my Mom who’s iconic, one of one, you’re an absolute treasure.

To Kait’s mom, who last week helped me catch a snake in our backyard, lock it in a cooler and transport it to a nearby stream and did so with a hearty laugh…we love you and please ask your daughter to stop going on the roof with a leaf blower attached to her back. She likely learned this from you :)

So much love to all of you out there, especially to our friends for whom this weekend is hard.

Say hello to Sesame Semolina, our newest bread friend and the Team Rose Bread take on the old-school Italian stirato, a “stretched” loaf (think ciabatta’s rustic cousin, pulled not shaped).

100% sourdough, made with all organic flours: fine durum, semolina, heirloom rice flour, a touch of ancient emmer semolina, and a heavy dose of toasted sesame, inside & out. We mix it, rest it, gently pull it into shape, and bake it hot for that crackly, golden crust and open, sandwich-ready crumb. Available as a sandwich loaf or pulled stirato.

We put our first batch to work on flank steak sandwiches, and the latest bake showed up alongside Kait’s incredible meatballs, learned from our dear friend, and the incomparable of . Highly recommend pairing Sesame Semolina with…anything coming out of KP’s kitchen.

Happy Easter from Bread Land, temporarily turned Easter Asado Land, where the rain held up just enough to spend time outside with family & friends. The hope of resurrection Sunday lingered in the air, like the smoke from wood fire cooking in a wheelbarrow. It’s one of the days we enjoy most all year.

An Asado may be about the meat, but we’ll always find a way for bread to have its moment in the spotlight.

Kait’s favorite bite of the day was a slice of grilled sourdough country loaf topped with melted provolone piccante, wood fired sausage and a squeeze of lemon.

Mine was heirloom sourdough chapa bread (think cast iron pita), smoked lamb shoulder, tzatziki, harissa & pickled onions.

Here’s a rundown of today’s lineup, out the door and into your wonderful lives. The bread we make is not the totality of who we are, but embedded into the DNA of each loaf you’ll find our mission, our purpose and a little bit about what we love to do.

3. Our bagels, like everything we make, are 100% sourdough and made with 100% organic flour. Boiled & baked, a classic order of operations, but slow fermentation & heirloom grains make them our riff.

4. Country loaf, comprised using 25% sprouted grains from local mill . We call it the “OG.”

5. Superhero sandwich a sandwich bread that everyone in the family loves. It’s ambient fermented and baked, so no sour notes, a sneaky amount of whole grains disguised in the absence of red tannins & free of seed oils or refined sugars.

4. Heirloom Honey Wheat Sourdough blends rouge de Bordeaux, einkorn and Sonoran wheat along with local honey and sea salt. 100% stone ground whole grain goodness, thanks to the amazing work from .

5. Our potato buns are made with GMO free potatoes, no refined sugar, no seed oils & zero preservatives.

6. Crusty white sourdough. Our compliment to the OG/Sourdough sandwich dough, a little softer and little less nutty complexity. We use a % of whole grain heirloom Sonoran wheat for flavor/nutrition along with extra virgin olive oil.

8. Abruzzi rye has caraway, onion and molasses. The smell in the oven is intoxicating and many customers consider it a meal unto itself, with a glass of red wine of course.

8. Rustic Italian is the same dough as our crusty white, baked directly on our stone hearths. It’s begging to be sliced and served with dinner, to be dipped in herby oil and we believe the more rustic it looks, aka “wonky,” the better.

9. Sourdough sandwich. Need we say more?

12. Cinny swirl. The current vibe includes 20% heirloom wheat and no seed oils. A toasted and buttered slice accompanied by a warm afternoon caffeinated beverage is a must.
