First off, I’d like to say “thank you” to all the customers who continued to encourage and support us throughout this journey. Your patience and belief in our mission was truly remarkable and I am incredibly grateful for each and every one of you as we worked hard to finalize a home for our new concept.

Yes! You read that right! The time has finally arrived. I am thrilled to announce that we will be opening Yuliya’s Ice Cream in in early 2023!

I am forever thankful for the amazing people who have helped me to bring this dream to reality: my partner for always staying by my side and not giving up on me and my ambitious ideas, for being supportive and contacting every available corner for lease in CLT (I know you’ll always remember me as your “longest client relationship” haha). And for believing in Yuliya’s Ice Cream and allowing us the opportunity to bring high quality ice cream to the Queen City. Thank you!!!

What can you expect during your visit?! Yuliya’s Ice Cream will offer handcrafted dairy and vegan ice cream made with natural, organic, and locally sourced ingredients. Most of our flavors (except those made with outsourced aka “local collab” mix-ins) and waffle cones will be gluten-free. And finally, this story wouldn’t be complete unless I honored my Belarusian roots and brought some of my most treasured childhood flavors to life. Some of the unique, slavic-inspired flavors to look out for include plombir, sour cream honey cake, and halva.

I’m super excited to be joining the Charlotte community and can’t wait to share this next chapter of ice cream with you. Now, let’s get to work! :)

It’s no secret that better ingredients make better food. That’s why when

and I opened this business, I already knew we would be using only premium and organic ingredients in our ice cream. Our dairy comes from grass-fed cows that are hormone- and antibiotic-free, raised on family-run farms. We don’t use any synthetic flavorings, dyes, emulsifiers, or preservatives. To ensure nothing artificial gets added into our ice cream, we make everything from scratch, including the ice cream base, all of the mix-ins, and the waffle cones (that by the way are gluten-free!!!).

After moving to the States, I developed an intolerance to dairy and gluten. This came as a shock and disappointment since I grew up eating fresh foods, bread, and quality dairy that Belarus is well-known for. This gave me even more motivation to make sure our product was as clean as possible, along with inspiration to begin experimenting with vegan ice cream and gluten-free baking. The biggest hurdle was figuring out how to create a plant-based ice cream lineup, without compromising the taste. But if you’ve been following along, you already know I love a good challenge and this one was no exception. ;-)

and I opened our ice cream sandwich truck “Cookies with an Accent” in Huntersville, NC In August 2019. Our ice cream sandwiches, and especially the ice cream by itself, were a big hit. We operated for two seasons and created a community gathering place. It was a dream come true until the pandemic hit. The commercial kitchen that we were renting shut down, and it forced us to close the truck. We searched for an alternative kitchen, but unfortunately couldn’t find one that fit our business needs, so we were left with only two options: either give up (which wasn’t the solution for me) or try to open a storefront location.

To make a very long story short, the process of trying to secure and open a storefront location was nearly impossible. I was faced time and time again with challenges that were out of my control and wasn’t sure where to turn as my confidence began to wither. It was a vicious cycle of the highest of hopes followed by the lowest of let downs, but I was determined to not let it deter me from fulfilling my dream. I continued to believe the hard work would all be worth it once I saw my business’ name on the front of my ice cream shop. The only question now was: when would that be?

part 2. how the “ice cream game” began

I never thought I would become an ice cream maker. When I was a little girl I helped my mom in the kitchen, but I never took cooking or baking seriously. Throughout my childhood, my vision of what my future career looked like changed several times. I never had a specific talent, but I always challenged myself to do the best job I could at everything.

It wasn’t until 2018 when my partner and I were in Nashville that we came across the most unique ice cream sandwich truck. They were specializing in custom ice cream sandwiches built from warm, melt-in-your-mouth cookies with delicious and super soft ice cream. This is when we got our initial idea for our first business adventure, and the game was on.

I started baking cookies in my apartment kitchen and stacking the freezer with all kinds of store-bought ice cream. I was assembling ice cream sandwiches almost every day and taking them to family, friends and people at work to taste test. Everybody loved them, but deep down I knew something was still missing.

I wanted to create a product that could be 100% homemade, and it wasn't long until I bought my first ice cream machine and started learning how to make ice cream. Despite the long hours working as a restaurant shift leader, I dedicated my mornings and days off to reading books and inventing my own recipes. Tapping into my creativity to work on new flavors and seeing other people enjoying my ice cream made me so happy, and I couldn’t wait to take my passion for ice cream to the next level.

Before we start talking about ice cream, I wanted to introduce myself and share my story.

I’m Yuliya , and I’m from Belarus.

part 1. From Belarusian Marketing Manager to American Entrepreneur

After graduating college in 2015, I was offered a Marketing Manager position in one of the Belarusian banks, which required English language skills. Since I didn’t speak any English at the time, I decided to spend my summer in the US, working and studying the language. During my first month here, I realized that America was a country of endless opportunities and I decided to stay. It was heartbreaking to leave my home, my family and a job that I enjoyed, but I knew I couldn’t pass on an opportunity to change my life and the lives of my family for the better.

Like many other immigrants who come here with $100 in their pocket and a language barrier to overcome, I started my American journey cleaning motels, bussing and serving tables. Working in restaurants helped me realize the huge role food plays in American culture, and the experiences that are created when people come together to share a meal. It was heartwarming to witness these moments shared around a table, and it reminded me of home where every night my family would gather over a home cooked meal. I knew this was something special and that’s how my dream was born. From then on, I was determined to open my own restaurant, but the type of restaurant, that was still to be discovered…
