12 days of Christmas bakes, based off the 12 Days of Christmas song! Day 2, Two Turtle Doves, brings us warm, gooey, nutty and rich Turtle Sourdough Brownies!

Recipe:

70 g Unsalted Butter, melted
250 g Granulated Sugar
1 Egg
2 Egg Yolks
75 g Vegetable Oil
75 g Cocoa Powder
56 g Sourdough Discard, Room Temp
40 g All-Purpose Flour
1/8 tsp Baking Soda
7 g Cornstarch
4 g Kosher Salt
100 g Chocolate Chips
1 C. Roasted Pecans, divided
Caramel Sauce for topping

- Preheat oven to 325 Degrees. Prepare greased 6x9 or 8x8 baking dish.
- Combine melted butter and sugar.
- Add eggs and egg yolks to sugar mixture, whisk until pale and fluffy.
- Add vegetable oil & sourdough discard, whisk.
- Add dry ingredients, whisk until combined, don’t over-mix.
- Fold in chocolate chips and half of your pecans.
- Pour into prepared baking dish, top with remaining pecans.
- Bake for 30 - 35 minutes, or until toothpick combs out with moist crumbs
- Allow to cook for 10 minutes, then drizzle with salted caramel sauce.

12 days of Christmas bakes, based off the 12 Days of Christmas song! Day 1, A Partridge in a Pear Tree, brings us a spiced Pear Galette with Sourdough pie crust! The pie crust is flaky and tangy which pairs perfectly with the warm, soft, spiced pears!

Recipe:
Pie Crust
2 1/2 C. All-Purpose Flour
1 C. Cold Unsalted Butter
1 C. SD discard (unfed at least 12 hours)
1 tsp Kosher Salt
4 - 8 TBSP Ice Water

- Combine flour and salt in bowl of a food processor, or if mixing by hand, a large bowl.
- Once combined, add cold sourdough discard and mix under just combined
- Cut in cold cubes butter until dough resembles peas. If using your hands, be sure to only use finger tips as your palms will warm up the butter.
- Once all butter is cut in, add ice water until dough starts to form large clumps. Be sure not to overmix
- Turn dough onto floured surface and form a disc. Cut disc in half and wrap each half in plastic wrap.
- Store in fridge or freezer until ready to use

Pear Galette
2-3 Bosc pears (or any pear of your liking), sliced
1/2 TBSP Cornstarch
1/2 C. Brown Sugar
1 tsp Vanilla
1/2 tsp Ground Cinnamon
1/4 tsp Ground Allspice
1 Egg, lightly beaten
Rolled out pie crust (can be store bought)
Coarse Sugar and Cinnamon for topping after egg wash

- Preheat oven to 375 degrees
-Wash and slice pears, add to a bowl, sprinkle with brown sugar, cornstarch, cinnamon, allspice and vanilla. Mix gently, as to not break the pears
- Roll out pie crust and add to parchment lines baking sheet
- Arrange pears on pie crust. Pull excess dough around pears
- Brush dough with egg wash, and sprinkle with coarse sugar and cinnamon.
- Cover with foil, bake for 30 minutes covered. - After 30 minutes, remove foil, and continue to bake for 20 minutes until golden brown.
- Let cool slightly before serving. You can drizzle with caramel or serve with ice cream!
