Brown Butter Banana Oat Chocolate Chip Cookies 🍪
Ingredients
• Unsalted butter — 115 g
• Light brown sugar — 90 g
• Granulated sugar — 40 g
• Ripe banana (mashed, about 1 medium)
• Vanilla extract — 5 g
• Egg yolk — 18 g (≈ 1 large yolk)
• All-purpose flour — 125 g
• Old-fashioned rolled oats — 70 g
• Baking soda — 3 g
• Salt — 2 g
• Cinnamon (optional) — 1 g
• Dark or semi-sweet chocolate chips — 100 g
Instructions
1 Brown the butter:
In a small saucepan, melt butter over medium heat until it foams and turns golden with brown bits at the bottom (about 5–7 minutes).
Pour into a mixing bowl and let cool 10 minutes.
2 Mix wet ingredients:
Whisk in the brown sugar and granulated sugar until smooth.
Add mashed banana, egg yolk, and vanilla. Whisk until combined.
3 Combine dry ingredients:
In a separate bowl, whisk flour, oats, baking soda, salt, and cinnamon (if using).
4 Combine wet + dry:
Fold the dry ingredients into the wet mixture until just combined.
Stir in the chocolate chips.
5 Chill:
Refrigerate dough for 30–45 minutes (essential for texture and flavor).
6 Bake:
Preheat oven to 175°C (350°F).
Scoop ~45 g of dough per cookie onto parchment-lined baking trays.
Bake 10–12 minutes, until edges are golden but centers still soft.
7 Cool:
Let rest 5 minutes on tray, then transfer to a rack to cool completely.
