Holiday market underway

Its spooky season so I decided to make some macs. One is a spiced chai, and another is a mystery flavor. Its a trick and a treat all in one! 🎃🍁🧡🖤

Today’s macaron making was quite interesting. It was my first attempt at trying Keto macarons.

I was hoping they would come out similar to my french macarons, however they did not.

I definitely still think they are good, there is definitely a difference though.

The macaronage isn’t as lite and airy as the regular recipe. My guess, there is something magical that happens when you combine the egg white and white granulated sugar, because thats where these went off the rails. A very dense batter is what I got. They did not smooth out, they did not rise or produce little feet.

They are blueberry keylime, but they are very sweet tasting due to the type of sugar that was used.

The others are light fluff and airy, their feet are a little over exposed, but over all the pink cookie is perfect, probably even more for the strawberry ones I’m going to do for E’s first birthday.

Where these went wrong… I used left over mango cream cheese filling from last week, and although I had NO issues last week, this week there must have been left over large pieces of mango from the curd I made, so much so that the piping bag exploded because it couldn’t force a piece of mango through the piping tip.
