Old Oak bakery is offering two new items and a fan favorite this week:
Jewish Rye Bread, Cast Iron Bagels, and our 1955 Oatmeal Raisin Cookies.

Our Jewish rye is a super tangy bread, achieved through a double fermentation process. Our bread contains a higher rye content than most american rye bread using freshly milled, organic and locally sourced flours.

Our bagels are baked in a cast iron pan imparting a chewy golden crust and a supple center.
The toppings come in four options: sea salt, everything seasoning, sesame seeds, or plain.
We are confident these will be the best bagels you have ever had. Bold statement I know! I invite you to read our blog post on our page for more detail into the history, ingredients and process of our bagels.

We have revived a 1955 cookie recipe that is not as sugary as recipes today, but rather an airy, crumbly cross between a cookie and a scone.

Cast Iron Bagels

The earliest recorded evidence of these boiled, then baked rings of yeast dough, was found in a Middle Eastern recipe book dating from the 1300’s. The earliest European reference to bagels in was in 1610 in the Jewish community ordinances of Krakow, Poland, referring to bagels being given as gifts to women during childbirth.

It was the Jewish immigrants of Poland who brought the bagel tradition to America at the turn of the 20th century. What was once a niche ethnic food is now arguably one of most popular baked good in America.

Old Oak Cast Iron Bagels are unlike commercial, or even local “artisan” bagels, which contain 18 or more ingredients. Our bagels contain five simple, organic ingredients; Hard Red Spring Wheat flour, water, honey, yeast, and kosher salt.

Our bagels are boiled and then baked in a cast iron pan, which imparts a golden chewy crust with a supple center. We are confident these are the best bagels you will have ever had.

Old Oak bakehouse Jewish Rye

Jewish Rye bread has a diverse history filled with passionate debate of what a great Jewish Rye should be.
Our Jewish Rye is kindred to the hearths of Eastern and Northern Europe of old intertwined with the spirit of the great Jewish bakehouses and delicatessens of America. The essence of our Jewish rye pays homage to the sentiment of Ari Weinzweig of Zingerman’s Bakehouse in Ann Arbor, Michigan - "Rye has a deep flavor, a flavor of the earth, a flavor full of character that gradually fills your whole mouth. Good rye has guts."

We employ authentic, centuries old traditions, recipes and methods to create this bread.

The soul of our Jewish Rye is sourdough. Thus, our process begins two days in advance. It simply takes time to build this much flavor. We use a double sour dough starter process. The first is a pure rye sour dough starter called Roshtshine, and then a second fermented starter, Alte Brot or “Old Bread.” Our version of Alte Brot is a fermentation of whole grain pumpernickel bread, and rye berries. Most bakers, commercial and otherwise, skip this time consuming step in its entirety. Before baking we use an old world practice of applying a rye wash called Kharmushke to give the bread a slight sheen.

Old Oak Jewish Rye is baked with stone ground organic hard red spring wheat, rye, and Spelt flours, rye berries, kosher salt and yeast. Of course, we do add the American twist to the recipe by adding caraway seeds.

Old Oak Bakehouse is making its debut by offering our 1830 Irish Soda bread for your St. Patrick's Day celebration!

Irish soda bread dates back to the 1830 in Ireland when the potato famine necessitated its inception. We have revived this authentic recipe using locally sourced ingredients and homemade attention. The result of which produces a toasted crumbly, buttered crust with a delicate interior, far superior to the commercial breads typically found for this holiday.

Create your own St. Patrick's Day tradition with our Old Oak Bakehouse 1830 Irish Soda Bread and make a St. Patrick's Day to remember.

With a nod to the century old Scottish oatcakes, we have revived an oatmeal raisin cookie recipe from 1955- credit The Quaker Oats Company.

Not as sugary as today’s cookies, but an airy, crumbly cross between a cookie and a scone.
