February--beetroot hibiscus tart (subtle and not very sweet but a gorgeous color)--crust is walnuts, sunflower seeds, date syrup and cinnamon and the filling is beets, hibiscus tea, coconut cream, date syrup, vanilla, orange juice and zest, cinnamon and agar.

Is this my best work...no. I didn't even like it and I was contemplating starting over from scratch especially since it's my fault I forgot the request was for cream cheese frosting. But here's the thing....it's not a paid order and it would cost me even more time and money to redo. If it was going to taste bad or fall apart I still would have redone it but it's for a kid, who, for all I know, has never had a birthday cake. He's going to be so happy to get a special cake with minifigures and stickers in the exact request he placed. If this had been a paid order I would have realized right away and suggested that this design would not have been a great idea with cream cheese frosting because it doesn't stick things together like glue the way buttercream does, but he wanted vanilla cake, strawberry jam filling (another knock against solidity) and cream cheese frosting. And as he's turning 5 and really wanted Sonic, I loved the idea of this design. So, yes, it's sagging a bit where the cake cuts come together but I'm still happy with the concept and the taste will be perfect so I'm saying the pieces are like the sections in a Sonic level where the ground goes up and down...it's thematic! :)
