Linzer Tarts…a derivative of the Linzertorte originating in Linz, Austria : traditionally made with ground almonds, wheat flour, butter, eggs, sugar, lemon zest and spices. These are made from an old Czechoslovakian family recipe which does not call for nuts. All recipes for Linz pastry dough in the Czech Republic omit the nuts. Interesting. Too expensive for the peasants of Bohemia?

Czech people were part of the Kingdom of Bohemia under the Holy Roman Empire, later the Austro-Hungarian Empire. Bohemians share an extensive history and border with Austria. Traditionally made at Christmas and Easter time several days to weeks ahead of time. Stored in tins or boxes in a cool place. Just like the Linzertorte, they get better with age.

Large Plum Kolache and Apricot Kolache
Koláče or kolache (plural: kolaches) is a Czech pastry made from sweet yeast dough that is traditionally topped with pools of sweet fillings such as plums or plum jam, cheese curd filling (farmers cheese in USA) or hand ground poppy seed filling. While its diminutive koláček (koláčky plural) (č makes ‘ch’ sound) denotes smaller individual versions. Modern toppings might include fruit such as apricot, apples, blueberries, cherries, lemon, pineapples, or raisins. The crumb topping called posipka or drobenka is also a more modern invention.

Its name is derived from the Czech word kolo meaning wheel referring to the traditional, round shape of the pastry. The pastry originated in the 1700s in the Czech Republic, where round breads are some of the earliest ritual foods, usually symbolizing the sun, moon and female. In Europe these treats were reserved for special occasions like weddings, epiphany, shrove Tuesday (Mardi Gras) Christmas and Easter. In America, Czechs or people of Bohemian ancestry, the pastry has become a vehicle for ethnic identification. .
