Does weather affect your sourdough bread?! I’m going to say yes, yes it does! Sunday I made a lovely rye/spelt bread. The dough was perfect when I shapped it and put it in the fridge for its long ferment…. Over night was had a temperature shift in weather. It went from high 20’s to 40’s and a drizzly rain. My bread flopped. I baked it up, it had an ear, so I thought it would be fine… I cut into the loaf I made for our family after my morning errands and it was goey and doughy! 🤨 Ugh!! So my Monday morning customer gets 2 new loaves this morning and these turned out lovely… the difference?! Well I went safe and did a wheat because it seems to be less temperamental than Rye, but we also had steady outside temperatures! I don’t really understand the science, but I do see the effects! Especially with Rye/spelt breads! Anyone else experience this?!
