Do you ever just wake up at 3am and invent a crepe recipe?
2 eggs, separated
1/3 cup lukewarm water
1 tsp baking powder
2/3 cup flour
1/3 cup sourdough starter discard, or equal parts flour and water
Pinch salt
Beat whites with baking powder until fluffy and opaque.
In another bowl, mix the other ingredients. Fold into whites. Heat a nonstick pan to medium-low with a drizzle of oil. Spread batter thin with a spoon and wait for bubbles to go all the way through (about 2 minutes), then flip and cook another 30 seconds. Eat hot.
Topping: blueberries + cottage cheese + homemade whipped cream + yogurt + brown sugar
