A friend challenged me to recreate a healthy snack she had in her office, and the result accidentally became my family’s newest obsession.
These 15-Minute Chocolate Oat Energy Bites are incredibly rich, perfectly crunchy, and naturally sweetened. They come together in one bowl with zero baking required. The real victory? My picky-eater husband has been casually snacking on them all weekend, and my son begged for them in his lunchbox today.
15-Minute Chocolate Oat Energy Bites
150g (8-9) Pitted Dates
1 Tbsp Milk
95g (1 cup) Rolled Oats
20g (2 Tbsp) Pumpkin Seeds, finely chopped
¼ cup Pistachios & ¼ cup Pecans, blended into a powder
¼ tsp Salt
½ cup Chocolate chips, melted (for the dip!)
Flaky sea salt (optional, but highly recommended)
The Method:
1. Toast for flavor: Roast the oats on a sheet pan at 350°F (175°C) for 20 minutes for maximum flavor and crunch. Do the same for your pistachios and pecans for just 10 minutes before blending them into a fine powder.
2. Make the paste: Soak your pitted dates in 1 Tbsp of milk for a few minutes, then blend them in a food processor until they form a smooth paste.
3. Mix & Roll: In a single bowl, combine your date paste, toasted oats, pumpkin seeds, nut powder, and salt. Mix until a thick dough forms. Scoop into small bite-sized portions and roll tightly between your hands to bind them.
4. The Dip: Dip each rolled bite into melted chocolate, sprinkle with a pinch of flaky sea salt and leftover nut dust, and let set!
