When grandma makes an apple pie, she uses a variety of different apples and that’s one reason it tastes so good. This is what we think of when we have an ‘heirloom’ coffee - which is what we get from Ethiopia. There are so many varieties of coffee (hundreds) and many that haven’t even been identified. Only about a dozen of those have been farmed on a large scale outside of Ethiopia. There is more variety of flavor notes with more variety of coffee. Darryl roasts these just enough to bring out those flavors. We have brewing instructions on our website. How do you like to make your coffee at home? (Vote below.)

We have St. Patrick’s Day themed macarons this week. One of our favorite times of the year to make macarons. Flavors are: Creme de Menthe + Chocolate, Irish Cream, and “Ends of the Rainbow.”

Be sure to grab a bag of coffee for the weekend. Our two staple blends, named after some models of buggies built at the Tyson & Jones Buggy Factory here in Carthage.
Stanhope is our dark roast coffee. Great with milk and sugar.
Phaeton is a blend of two complimentary coffees from the Americas. This is the coffee we use most often in house for our Light Roast, Espresso, Flash Cold Brew, and Nitro. Great on its own, but you can also add cream and sugar if that’s your thing.

Our annual XOXO Blend features a natural process coffee from Honduras and a washed coffee from Guatemala. Together we taste notes of dark chocolate, ripe berry, and a faint hint of hazelnut.
