And one more post this week on the glory of sourdough! Making bread is science at its best. Perfect temp and humidity results in perfect bread. The “bellies” on this week’s loaves at Deli On The Square are extreme! They barely can fit in the bag although the loaf weight is the same as always. So, yesterday was a muggy mess but the dough loves it!

ORGANIC SOURDOUGH SPELT LOAVES this week at Deli On The Square! Spelt is my favorite dough and bread. Spelt is an ancient grain. It predates wheat. Spelt is slightly sweet, nutty, and more nutritious than wheat. It is also easier to digest. Large scale producers ditched it because spelt is more difficult to process mechanically. The flavor though cannot be ditched! Spelt has a weaker gluten structure than wheat. 100% spelt loaves can only be pan-baked to retain their structure. Get your toaster ready because this bread is a treat!

This week at Deli On The Square….Polenta (Cornmeal) Sourdough Loaves! As part of my “breaducation” (aka obsession ☺️) with sourdough, I attended baking classes in Asheville, NC last April. In one class, an Appalachian miller shared regional dent corn grown in the area on small farms for decades. He had grown the corn and ground it adding a small amount into the bread dough. Much like popcorn bursts due to moisture, this finely ground corn served as tiny steam injectors in the dough. This makes an even more tender crumb in a baked loaf. The loaf does not taste “corny”, but is beautifully speckled with the flecks of golden corn.

The miller kindly gave me some seed that I grew last year. Then this “Little Red Hen” went into overdrive. I protected the corn from the onslaught of deer 😬 , harvested it, ground it, and it is in the bread coming to you today.

The length of this post is due to the fact that a teacher is always a teacher…even when retired. Also, I have a ham hock on the stove and could think of nothing better than a loaf of this bread to accompany the coming soup!

This week at Deli On The Square…..Everything Bagel Loaves! The baker took leave of her senses and seemed to be throwing seeds everywhere. 🙄 There are also plain loaves top-seeded with sesame and poppy seeds. One plain pan loaf is available as well.
Think about a “leftover ham from Easter” sandwich on this bread. Buy it now and freeze for use later!

Delivering beautiful maple oatmeal sourdough loaves to Deli On The Square this morning. These loaves have a finer, lighter crumb than my tradional sourdough. They are subtly sweetened with maple syrup and packed with the goodness of rolled oats. Did you know Ohio has a thriving maple syrup industry? A bit of a challenging day here in Carrollton with many power outages and fallen trees. When electricity was restored this afternoon, I felt like I had to bake a pie! I ended up making two…a Tollhouse and an oatmeal. Then it hit me that it is Pi Day…3.14. It only seems right to eat a slice of each! ☺️

I am planning to do “sourdough bake to order” for Saturday, March 14 pick-up along with my usual delivery to Deli On The Square on Tuesday morning, March 10.

Bake to order works like this:
I have a set list of sourdough items offered to order. If I have your phone number, the order info will come to you on Saturday morning. You can place an order, pay with credit card, Venmo, Zelle, or cash at pick-up. The orders close on Tuesday afternoon. I then bake what you ordered on Friday evening. Customer pick-up is Saturday morning from 10-11 in the big yellow church parking lot across from the post office.

No sourdough delivery this week at Deli On The Square. Did you know it takes three days to make a properly fermented loaf of nutritious sourdough bread? I begin on Sunday for Tuesday delivery. One of my new twin grandbabies had a little blip Sunday night. Baby Alex was getting the care he needed while I handled nighttime feedings for Baby Sage. Mixing the sourdough starter did not get handled! All is fine with the twins. Bread as planned next week.

Here are my new little loaves….oops….loves! ☺️
