A stunning natural rind baby Swiss!
Swiss is one of those cheeses that is very delicate and its temperature, turning times and humidity settings can be quite intense. There’s a lot of steps to Swiss and variations that have have to be done at just the right time to get that wonderful Swiss flavor and those beautiful whole developments ! now that all the holes have developed this little beauty will go into the cheese cave for a spinal stage to age and develop flavor . It will be allowed to age for a month or two before being ready to melt on French onion, soups, as well as ham and Swiss sandwiches!

48hours of flipping and drying
Well now wait another 24 hours allowing our rub and olive oil mixture to soak in at 70° and 48% humidity
Before it heads to the cheese cave to age for the next several months at 80% humidity and 45°
