In honor of Memorial Day I wanted to pay tribute to my Grandfather. My grandfather was one of the greatest inspirations in my life and one of the main reasons why I became a chef. He was born in Saint Kitts and Nevis and later traveled to England, where he worked as a railroad conductor, before eventually making his way to America. Even though he was highly educated under the British education system, during that time his education was not viewed as “high enough” because of his status as an immigrant. So he rebuilt his path and became a chef at the Hyatt Regency Boston, where he became a very distinguished and deeply loved chef. Even today, his picture still hangs on the wall there.

He passed away when I was eight and a half years old, and that loss was one of the hardest moments of my life because he was never too busy for his grandbaby. No matter how hard he worked, he always made time for me. He loved the women in his family, adored his grandchildren, and believed deeply in the importance of family and togetherness. That was one of the foundations of who he was.

When he passed away, the number of people who came to honor him made me realize something powerful: he did not only impact our family — he impacted everyone around him. Both inside and outside of our family, people loved and respected him deeply. No one has ever truly filled that void since he left us, but even today, he is still with me.

Every time I step into the kitchen, I carry him with me. In the discipline, the love, the patience, the respect for food, and the importance of bringing people together — he is there. And through every dish I create, a piece of his legacy continues to live on.
