⭐️⭐️For those who are curious about the sourdough process, here it is! The total process is about 32hrs for a loaf of bread!
It starts with my cultured sourdough starter I made from scratch!
A sourdough starter is a culture containing a stable blend of wild yeasts and suitable lactic acid bacteria. The culture is maintained indefinitely, fed with fresh flour and water (also called refreshing) consistently. A sourdough starter is used to seed fermentation in new dough when baking bread and is responsible for leavening (making rise) and flavoring a loaf of sourdough bread.
I feed my starter around 6-7am everyday. It takes 4-6hrs for the starter to be at peak rise in order to bake with it! At peak rise I then use it to make my dough for my bread.
Once I have a shaggy dough, I let it test for one hour. After one hour, starts the stretch and folds. This means I stretch and fold the dough every 30 minutes 3-4 times, this can take up to 2hrs!
After that is done, it is left to bulk ferment on the counter for 4-10hrs. I’ve learned to time this perfectly so I’m not up at one and two AM shaping dough 😬. I learned that the hard way! After bulk fermentation is done, I then shape the dough into boules and this is where I add any inclusions like jalapeños and cheddar, cinnamon raisin, and lemon blueberry! Once the boule is formed they are put into banneton baskets and put into the refrigerator over night!
The next morning I take them out of the fridge, this is when I score the designs on the top and bake them. I only have three Dutch ovens, so I cook three at a time! The cooking time is 45 minutes. Sometimes I’m baking 25-30 loaves in a four day period. After done baking I immediately take them out of the Dutch oven and set them on the cooling racks. Once completely cool, they are packaged in pretty paper bread bags and labeled with ingredients and my info! I also print and make all of my own labels! That is the process I do for y’all to enjoy my sourdough bakes! 😊😊
