Did you know that just adding sourdough culture (starter / fermented flour) to a recipe doesn’t mean it’s fermented? And without fermentation, you miss out on all the benefits that come along with the process - digestibility and lower glycemic to name just two (mind you, it’s still a treat).
In my kitchen, I’m committed to fermenting all my bakes - and that can be tricky as you balance moisture absorption, flavor, acidity, rise… sure glad real life baking chemistry makes a lot more sense to me than high school chem class. It also means all that all my bakes start 12-48 hours before baking. Time, attention and care.
