The best way to eat apple pie? Crushed in a cup, heated a bit with the ice cream and whipped cream melting on top. If there is one thing I know how to do it’s up my triglycerides. Pro Tip: to keep pie from being too runny without adding a ton of cornstarch, cook until bubbly then cool completely. Put it in the freezer for about 30 minutes after complete cooling and voila pie stays together.
How many of you make the green beans with mushroom sauce and those onion things? Ok. Not to shame anyone. Lol. I remember the first time I went to someone’s house and they served that. Yeah, being a bit of a food snob, I wrinkled my nose at it. The idea of anything from a can was appalling. I remember thinking at the first bite it was pretty good. Too salty, the taste of can. That metallic taste always stands out for me. Then I thought of the possibilities. A few months later I tried it my way. Delicious.
It’s one of those things where I don’t have an exact recipe. I used haricot verts ( reg green beans are fine). Then I made a mushroom medley bechamel. This year I have Cremini, chanterelle , sh*take, and a few yellow footed. Portobellos or baby Bella’s work really well.
Next cut super thin onions and chop then a bit. I blot them a little and then toss them in flour with some salt added. Then I fry these. Mix the mushroom sauce and green beans. Right before serving cover with the frizzled onions. Despite the extra work you will never go back to the old way. Really.
To keep buttermilk available for baking, freeze it in ice cube trays and then take the frozen buttermilk cubes and place them in a freezer bag.
Obsessed with bread making. This weekend was bagels. Didn’t get the hang of the bagel forming until the end but the taste and texture were good. Started with a sponge. I want to open a bread bakery now “House of Pain” Francophiles will get this. Lol.

If anyone missed last week, I will be delivering macarons until Thursday. Same as last week 25 per dozen and free delivery. West Essex, wayne, Little Falls, Montclair, Parsippany, Montville, verona. Cedar Grove. Etc.
Asalt and Buttery Chocolate Chips
300 g butter
355g dark brown sugar
265 g white sugar
2 teaspoons vanilla
260g bread flour
225 g AP flour
1.5 teaspoons baking soda
2 teaspoons salt
1/4 baking powder. ( optional).
565 g high quality chocolate chip ( if you can find one in the Supermarket ). Just remembered King’s carries Guittard. They have a 45% and a 66%. Really good chips.
Cream butter and sugars.
Mix eggs with vanilla and add in thirds
Mix dry ingredients together and add them to wet ingredients. Mix on medium until just incorporated.
Add choc chips. Mix on low to combine
Using bread flour makes them thicker. If you overmix this they will be hard. Higher gluten gives a thicker flour. You can see the difference if you switch between Gold medal and King Arthur. King Arthur has a higher gluten level. I think it was 11.2 %. Gold Medal is 10.6%. It does make a difference.

1) baking soda
2) lower protein flour ( cake is really low)
3) lower oven temperature
Things that make your cookies thicker
1) refrigerating or freezing dough
2) baking cold or frozen
3)lowering baking soda.
4) higher oven temperature.

When you find a bag of mini’s in the bottom of the freezer. So sad. And there was a masala chai. I need to start making these again.
It’s always sad when you get to the last bite of Creme brûlée. I want to try making it next time with a little cardamom sugar over thinly sliced sautéed pears

Hello, I just wanted to say good-bye to all our customers. It is with a combination of sadness and excitement that announce the closing of Asalt & Buttery I have been offered a wonderful position as production manager with a great company.
