Hey guys. The Eleven Acre Baker is still here. She's just baking a little differently these days. Somewhere along the way, I realized I didn't want baking to feel like another full-time job anymore. So I'm changing things up.

I'll still be baking for our farmstand, and from time to time I'll open preorders for certain things when I have the time and actually feel like baking them. 😂 But I won't be posting here every day or taking every kind of custom order. I just can't anymore. I am only one person.

Most of the recipes, baking tips, kitchen talk and everyday life you've seen here over the year are slowly going to start moving over to Riparian Ridge Homestead, because that's really where they belong now that we're a homestead bakery.

This page will stick around for bakery announcements, farmstand menus, preorder drops and whatever else comes out of my kitchen tho. Less pressure. Less stress. Less posting just because facebook says I'm "supposed to." More baking because I actually WANT to. And I think I'm going to like it much better that way. ❤️

No, I haven't had time to photograph every chocolate chip cookie before somebody eats it.

This time of year is just BUSY. Homestead chores are in full force, we're getting things ready for the "ber" months, school is starting back up, working full time outside of the bakery and homestead, and somewhere in there we're still supposed to sleep. 😂

Sometimes there just isn't much room left for Facebook posts.

But we're still here, the oven is still getting used, and eventually I'll remember to take a picture BEFORE we eat everything. Maybe. 😂

Sweet, tart, creamy lemon filling with fluffy toasted meringue piled on top... yep, I'll take a slice. 😂

Lemon meringue is one of those old-fashioned pies that doesn't need anything fancy added to it. It's been good forever just the way it is.

Now I just need somebody where it isn't wet to make one so I can celebrate properly, this rain tho!

Today is National left-over day! Does a bakery have left overs? When all the people pick up their orders, nope. But when they don't, and it does happen, yeah, sometimes. If I can't think of anything else to do with them, I normally take them to my work and share with my co workers, they appreciate the goodies and they don't go to waste in my fridge.

I know a few people that never eat left overs! What do ya'll do with yours? Do you eat em, share em or throw em out?

Today there will be no baking. Woke up to our daughter calling to tell us to take cover, that a tornado just hit their town not to far from us and it was comin our way. Yes, they are ok. Lots of wind, rain, hail, tree damage, power outages. If you're in the line of these storms, take shelter if needed, check on your people, stay safe out there.

Happy National Sons and Daughters Day!

I have three daughters and a son, and all four of them have spent a whole lot of time in my kitchen over the years.

They started out little, standing on chairs and helping me make breakfast, cookies, and whatever else I happened to be making that day. As they got older, the kitchen became part of their chores. They had to learn how to cook for themselves because, well... Mom wasn't going to be cooking every meal for them forever. 😂

Were all those meals great? Nope, not all the time 😂

But that wasn't really the point. They were learning, how to feed themselves, how to follow a recipe, how to make do when something didn't go quite right, and eventually how to figure things out on their own.

And somewhere along the way, I started recruiting them into the bakery too.

Pumpkin roll season? Yep, I needed help.

Candy making at Christmas? Come on in.

A big cake order and I needed another set of hands? Guess who got recruited. 😂

Over the years, they've helped me get through some pretty big baking days, and there were definitely times I wouldn't have been able to get it all done without them.

I hope they know how much I appreciated every single one of those moments. But just in case I haven't said it enough...

Thank you for standing beside me at the counter, helping with the messy jobs, learning along the way, and giving up some of your time to help Mom chase another crazy baking idea.

I hope somewhere along the way I taught you more than just how to make a meal or bake a cake. I hope I taught you that you can figure things out, make something with your own two hands, and maybe even enjoy the process once in a while. 😂

So here's to my four kids.

I love you all more than you probably realize...always. ❤️

Happy National S’mores Day!

I know most people probably think of sitting around a campfire, roasting a marshmallow until it's either perfectly golden or completely on fire, then squishing it between graham crackers with a piece of chocolate. And don't get me wrong... that's a pretty good s'more. But my favorite s'mores treat wasn't made around a campfire at all.

It was the S’more Galore from Dairy Queen. And if you remember it, you know exactly what I'm talking about. 😂 That thing was SO good. Chocolate, marshmallow, graham cracker... basically everything you love about a s'more without having to smell like a campfire afterward. Dairy Queen, if you're listening, BRING IT BACK. 😂

Of course, being a bakery, we can't let National S'mores Day go by without talking about all the ways you can turn those same flavors into baked goodies. S'mores brownies, cookies, cupcakes, bars... there are plenty of ways to get your chocolate-marshmallow-graham cracker fix. But I'll still be over here waiting for my S’more Galore comeback.

What discontinued food do you wish they'd bring back? Because I know I'm not the only one with a list. 😂

It's been quite the busy weekend around here, worked Friday til midnight, went to bed around 2, got up 4 hours later, cooked a bunch of food for our family reunion, went to the other house and painted til about 11, drove home, went to bed around 1, got up again at 7, made food again and cleaned the house cause the girls are all coming over to give Nate his birthday gift, phew, got a few more things on my to do list for today, I think I'll add take a nap to it haha. Have a great Sunday ya'll :)
