About Lindsey Kay

Lindsey grew up in Mankato, Minnesota but after getting married and moving to Minneapolis she co-founded a church, ministry and school.

For 23 years she served faithfully in whatever area was needed. The favorite part of her life is being a mom to her 6 children; 3 boys and 3 girls ranging from 21 years to 1 year old. She enjoys baking and art in any form; music, dance, acting, painting, sculpting, makeup, graphic design and decorating baked goods which is what led to the opening of Itza Treat in December 2025.

Well, due to high demand there will be more Chocolate Zucchini Cake for pickup on Friday. Pre orders only so I know how much needs to be made. $5 each. It does have chocolate chips in it but I don’t do toppings because it’s already so moist and delicious without anything extra. Zucchini is fresh from the garden. A favorite treat of mine growing up was homemade donuts dipped in sugar. I’ve kept the tradition for my kids and it’s a favorite of theirs too. They will be available to order soon.

Happy Saturday! Thank you all for your prayers. My son and I have been back from the hospital since July 2. We've adjusted to being back home and he is doing really well. In case you didn't know, God still works miracles today! He continues with outpatient therapies which take a lot of time so I'm back making cookies but at a slower pace. Thank you again for all the prayers and support!

This post is coming a little late but I cannot take any orders right now. I’ve been in the hospital with my 2 year old son Joseph since he had a stroke on 6-14-26. I will let you know when I’m back. Please keep us in prayer.
