Hello friends!
We are not baking this week because we are finally moving into the new bakery space! Ah! We can hardly contain ourselves. We started the first small fire in the new oven earlier this week and gradually have been making bigger fires. We're slowly curing the oven in hopes to start baking in it by the end of next week. Blessed fire, we've been waiting so patiently for you!
We started this journey back in the fall and it took a few months just to get the roof up. The timber frame was designed and built by our talented friend, Garnet Morgan and Jay, with tons of help during construction from Jonah Woodstock. All the lumber is local and was milled by Pablo Cope. These last couple months have been dedicated to constructing the oven all the while in the hustle of market of season. We were able to financially accomplish all of this with the help of a local lender group here in the valley. We are so grateful to them as they are all neighbors, friends and loyal bread eaters.
We do what we do because we believe it is important to have sustainable, local and deeply nutritious food sources. As most of you know, all the flour we use comes to us locally from micro mills near Asheville- Carolina Ground and Farm & Sparrow. Without them we wouldn't be baking. They provide the gold! The beautifully organic, regional, stone ground grains. Thank you!
Lastly, thank you Jerry Newton and the Mushroom Factory for being the bridge to our dreams and supporting our visions. Two years ago we met Jerry at the little Micaville Farmer's Market and he offered Jay to come try baking in his masonry oven. It was just the direction we wanted to go in with the bread to make the vision feel complete. Since then, he has been engaged in every step of this process. Love you Jerry!
