Cheesy Tortellini in Red Sauce

Ingredients

* 1 (20 oz) package cheese tortellini
* 1 tablespoon olive oil
* 3 cloves garlic, minced
* 1 small onion, diced
* 1 pound ground Italian sausage or ground beef
* 1 (24 oz) jar marinara sauce or homemade
* 1 (14 oz) can diced tomatoes
* 1 teaspoon Italian seasoning
* ½ teaspoon salt
* ½ teaspoon black pepper
* 1 cup shredded mozzarella cheese
* ¼ cup grated parmesan cheese
* Fresh parsley or basil for garnish

Instructions

1. Cook the tortellini according to the package directions. Drain and set aside.
2. In a large skillet, heat olive oil over medium heat. Add onion and cook until softened. Stir in garlic and cook for 1 minute.
3. Add the sausage or ground beef and cook until browned. Drain excess grease if needed.
4. Stir in marinara sauce, diced tomatoes, Italian seasoning, salt, and pepper. Simmer for 5–7 minutes.
5. Add the cooked tortellini to the sauce and gently stir to coat.
6. Sprinkle mozzarella and parmesan cheese over the top. Cover for a few minutes until the cheese is melted.
7. Garnish with parsley or basil and serve warm with garlic bread or a salad.

Optional Add-Ins

* Spinach
* Mushrooms
* Red pepper flakes for heat
* Ricotta dollops on top

Watermelon Feta Mint Salad 🍉

Ingredients

* 6 cups watermelon, cubed
* 1 cucumber, sliced and quartered
* 1/4 red onion, thinly sliced
* 1/2 cup crumbled feta cheese
* 2–3 tablespoons fresh mint, chopped
* 1 tablespoon fresh parsley, chopped (optional)

Dressing

* 2 tablespoons olive oil
* Juice of 1 lime
* 1 tablespoon honey
* Salt & black pepper to taste

Instructions

1. In a large bowl, combine the watermelon, cucumber, red onion, feta, mint, and parsley.
2. In a small bowl, whisk together olive oil, lime juice, honey, salt, and pepper.
3. Pour the dressing over the salad and gently toss until everything is coated.
4. Chill for 15–20 minutes before serving for the best flavor.
5. Garnish with extra feta and mint if desired.

Lemon Ricotta Pasta

Ingredients

* 12 oz angel hair pasta
* 1 cup ricotta cheese
* 1 lemon (juice + zest)
* 1 cup freshly grated Parmesan cheese
* 2 cups baby arugula
* 2 cloves garlic, minced
* 2 tbsp olive oil
* Salt & black pepper to taste
* Reserved pasta water as needed

Instructions

1. Cook angel hair pasta according to package directions. Reserve 1 cup of pasta water before draining.
2. In a large bowl, mix ricotta cheese, lemon juice, lemon zest, garlic, olive oil, Parmesan, salt, and pepper.
3. Add hot pasta to the bowl and toss until creamy. Add a splash of pasta water if needed to loosen the sauce.
4. Fold in the baby arugula until slightly wilted from the heat.
5. Top with extra Parmesan, cracked black pepper, and more lemon zest before serving.

Crockpot Taco Pasta

Ingredients

* 1 lb ground beef
* 1 small onion, diced
* 1 packet taco seasoning
* 2 cups beef broth
* 1 can Rotel tomatoes, undrained
* 1 can corn, drained
* 1 can pinto beans, drained and rinsed
* 8 oz medium shell pasta
* 1 cup salsa
* 1 cup shredded cheddar cheese
* 4 oz cream cheese
* Fresh cilantro or parsley for garnish

Instructions

1. In a skillet, cook the ground beef and onion until browned. Drain excess grease.
2. Add beef to the crockpot along with taco seasoning, beef broth, Rotel, corn, beans, and salsa. Stir well.
3. Cover and cook on low for 4–5 hours or high for 2–3 hours.
4. Stir in the uncooked shell pasta. Cover and cook another 20–30 minutes until pasta is tender.
5. Mix in cream cheese and shredded cheddar until melted and creamy.
6. Garnish with fresh cilantro or parsley and serve warm.

* Sour cream

🥗 Mediterranean White Bean Salad

Ingredients

* 2 cans (15 oz each) white beans (cannellini or great northern), drained & rinsed
* 1 cup cherry tomatoes, halved
* 1 cucumber, diced
* ¼ red onion, finely sliced
* ½ cup kalamata olives, pitted & halved
* ¼ cup fresh parsley, chopped
* ¼ cup crumbled feta cheese (optional)

Dressing:

* 3 tbsp extra virgin olive oil
* 2 tbsp fresh lemon juice
* 1 clove garlic, minced
* 1 tsp dried oregano (or 1 tbsp fresh)
* Salt & black pepper to taste



Instructions

1. Prep the base: In a large bowl, combine the beans, tomatoes, cucumber, onion, olives, and parsley.
2. Make the dressing: Whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper.
3. Toss: Pour dressing over the salad and gently mix.
4. Finish: Sprinkle feta on top (if using).
5. Rest (optional): Let sit 10–15 minutes so flavors meld.



Tips & Variations

* Add avocado for creaminess or tuna/grilled chicken for protein.
* Swap parsley for fresh basil or dill.
* Toss in arugula or spinach to make it more of a leafy salad.
* For extra zing, add a splash of red wine vinegar.



Storage

* Keeps in the fridge for up to 3 days
* Tastes even better after a few hours as flavors develop
