For the past 15 years, my professional focus has been serving BV, all while adapting to changes and witnessing our town's growth. Yes, there was a lot of sweat, blood, tears... but also much joy, success, and legacy. For those we've helped along the way, and the staff I've had the pleasure to work with and mentor, thank you for being part of that journey. It has been quite the journey, full of twists and turns, and never in a straight line. It's not complete...but Simple Eatery is turning a page.
For those who don't know our history. I moved to BV in 2009, to open Eddyline Southmain. Then came the brewery and canning and distribution. 5 years later, I moved on from Eddyline and I opened Simple Eatery in 2014, at a time when very few businesses were open consistently on Main Street. Also at that time, my daughter was terrifyingly very ill, and after a long arduous struggle we found that part of it was fructose intolerance. Fructose is in everything. Honey, agave, juice, most fruit, many vegetables, anything shiny, pretty much anything in a package. I resorted to making food from scratch at home for her. And we quickly learned there wasn't a restaurant that served food she could safely eat. So my mission was to create that place (for her and for others with specific dietary needs). A place that served clean, known-sourced, fructose-free, soy-free, non-gmo food, all-natural food made from scratch—something the entire family could enjoy, regardless of diet. Tastier, colorful, clean and the highest quality meat I could get. At first, it proved nearly impossible, so we simply made everything. We made our own pesto, mayo, dressings, sour cream, chicken broth, beef broth, hand-cut steaks, fresh (never frozen) chicken. We STILL make almost everything 10 years later. And of course we bake everything in-house, with unbleached, unbromated, non-gmo flour using a wild sour starter that is 12 years old.
As the town adapts, so must we. We are shifting, as we did during covid, when we laid off zero employees, became a grocery store, delivered food and then started a pop-up pizza place which later became Crave! We see gaps and needs that aren't being fulfilled, and are courageously adapting to support our town and you.
Coming soon, we will become a breakfast, brunch, lunch restaurant. Still made from scratch, all natural and highest quality food we can find, but just earlier in the day. We will stop serving dinner, but this will free us up to have a space for events at night (rehearsals, graduation gathering, retirement, holiday party, town events, 5th qtr, school events), without closing on our customers that count on us to be open for their meals, gatherings, special occasions. I LOVE BV, and can't wait to be able to be part of your mornings on Main street!
