smash burger tacos 🌮🍔

these are so easy & a weekly stable for us! trust me you’ll impress anyone with these smash burger tacos!

ingredients↓
•sautéed onions (optional)
•1lb ground beef
•10 taco shells (corn or flour)
•10 slices of cheese, any kind
•garlic & onion powder
•salt & pepper
•toppings: burger sauce, lettuce, pico, avocado, etc.

burger sauce↓
•1/3 cup mayo (can add more or less)
•1/2 cup Greek yogurt (or more mayo)
•2 tbsp ketchup (we use )
•1 tbsp white wine vinegar or pickle juice
•1 tbsp yellow mustard
•garlic powder
•paprika
•salt & pepper

directions↓
Start by sautéing your onions in a plan with oil. Cook covered on low for about 15 minutes. You may need to add water to help them cook & soften. Season with salt, pepper, balsamic, and dash of honey.
Prepare the sauce by combining everything into a bowl & refrigerate until tacos are done.
Prepare the beef by smashing ground beef onto the taco shells until fully covered. Season with salt & pepper then add face down to a hot oiled pan. Cook for about 5 minutes on medium-high heat until fully cooked. Flip your tacos to get the other side of the tortilla crispy & golden. Once fully cooked assemble your tacos with whatever toppings you’d like!

Summer Sandwich Series ☀️ Part 1

Turkey, whipped pesto ricotta, fresh tomatoes, arugula, and homemade sourdough rosemary focaccia.

Recipe↓
-Sourdough Focaccia (homemade or store bought)
-10 slices of deli turkey (or more if you want)
-8oz fresh mozzarella, sliced
-1 or 2 heirloom tomatoes
-1/2 cup arugula
-1/4 cup pickled red onions
-salt & pepper
-balsamic glaze

Whipped Pesto Ricotta↓
-1/2 cup whole milk ricotta
-3 tbsp pesto
-2 tbsp mayo
-1tsp lemon juice
-salt & pepper

Directions↓
Make your sourdough focaccia unless using store bought! Slice it in half and spread on top the whipped pesto ricotta. Then layer on the turkey, mozzarella, and tomatoes. Season with salt and pepper. Add your arugula and finish off with a drizzle of balsamic glaze! Cut into squares and enjoy by the pool or wherever you want this summer!🫶🏼

The perfect healthier sweet treat🤍🍫

Recipe↓
-9 medjool dates, pitted
-1 banana sliced
-1 cup Greek yogurt
-1/3 cup peanut butter
-dash of vanilla extract
-1 cup chocolate chips
-1 tbsp coconut oil

Directions↓
Line your dates down on parchment paper & flatten them. Top with sliced bananas. Mix your yogurt, pb, and vanilla then layer that on top. Melt your chocolate chips & coconut oil together and pour over top. Let freeze overnight or for at least 4 hours. Cut into squares & enjoy! Store in the fridge or freezer :)

These buffalo chicken stuffed sweet potatoes have been on repeat lately 🔥
Easy, filling, and packed with proteinnnnn. Save this for your next dinner idea 🤍

INGREDIENTS
•sweet potatoes
•shredded chicken
•buffalo sauce ( is the best!)
•fresh cilantro (optional)
•feta or blue cheese
•buttermilk ranch (recipe below)

DIRECTIONS
Bake sweet potatoes in the oven @400 for 45-60 minutes. While that’s cooking prep your buffalo chicken by mixing shredded chicken, cilantro, and buffalo sauce in a bowl. Set that aside and make your ranch. Once sweet potatoes are fully cooked, mash your sweet potatoes, add butter, salt, buffalo chicken, feta or blue cheese crumbles, and drizzle ranch on top!

HOMEMADE BUTTERMILK RANCH
•1/2 cup mayo ( is amazing)
•1/2 cup Greek yogurt (or sour cream)
•1/2 cup buttermilk (or 1/2 cup whole milk + 2 teaspoons lemon juice or white vinegar and let sit for 5 minutes!)
•2 garlic cloves
•1/2 tsp onion powder
•1 tbsp fresh dill (or 1 tsp dried)
•1 tbsp fresh parsley (or 1/2 tsp dried)
•1 tbsp fresh chives (or 1/2 tsp dried)
•salt & black pepper to taste
•optional: squeeze of lemon juice or white vinegar for extra brightness

Sweet potato fries + date sweetened chocolate + one ingredient peanut butter + raw honey + cinnamon = weirdly the best dessert 😭

crispy chicken taquitos + greek salad🤌🏼
fried in beef tallow, high protein, & actually so simple

INGREDIENTS
•3 cups cooked chicken breast (shredded or diced)
•10-15 tortillas (flour, corn, gluten free, etc.) I used
•cheese of choice (I used feta)
•beef tallow for frying

DIRECTIONS
season your chicken breasts & cook in the slow cooker to shred or cook on a skillet. Cut or shred your chicken breast. Assemble your taquitos by stuffing with chicken & cheese. Roll them up then fry them in beef tallow over medium- high heat for about 5 minutes on each side. Plate and serve with guac, salsa, sour cream, Greek salad, etc!

meal prep In-N-Out burger bowls🍔✨

one of my favorite high protein meal prep lunches because they’re easy, filling, and I actually want all week. my high protein in n out sauce is what makes these so good!

RECIPE:
cut up about 4 sweet potatoes or regular potatoes and season with olive oil, salt, pepper, onion, garlic, and paprika. Bake at 400 for about 20-30 minutes until soft. While that’s cooking cook your ground beef with salt & pepper. You can also sauté some yellow onions as well (I didn’t have any). Once everything’s cooked assemble your bowls. I did lettuce, potatoes, ground beef, and my homemade in n out sauce. You could also add some pickles, sautéed onions, tomatoes, etc.

IN & OUT SAUCE:
1/4 cup plain Greek yogurt
1 tbsp mayo
1 tbsp ketchup
1–2 tsp yellow mustard
1 tbsp finely chopped pickles
1–2 tsp pickle juice
1 tbsp very finely minced sautéed onions (optional)
Pinch garlic powder
Pinch paprika
Black pepper
