(SOLD OUT) 🍋‍🟩 9” Key Lime Pie (feeds 8-10) $20

(SOLD OUT) 🍰 Raspberry filled, 4-Layer Vanilla Cake (feeds 2-3) $15

👩🏻‍🍳 ⭐️ I have spent years trying to recreate the best key lime pie I ever had on Sanibel Island back in 2005 (sadly the restaurant is no longer there). Believe it or not, that Sanibel pie was even better than any I’ve had in the actual Florida Keys! Anyways, I think after years of experimenting I can write this one down in permanent marker and lock it in the vault with the rest of my recipes that took years to make just perfect.

This Jamaican Hummingbird Cake is headed to The Ray of Hope Foundation gala tonight for their cake auction. I hope it brings in some big bucks in honor of brain cancer!

This 9 inch, 9 pound cake (yes, you read that right) is filled with crushed pineapple, toasted pecans, cinnamon, cardamom, farm fresh eggs and bananas, among some other important ingredients. Over half of the weight belongs to the dreamy cream cheese icing that surrounds and separates the three layers of moist, dense cake. The top is lightly dusted with cinnamon and presented with dehydrated pineapple roses.

Tradition dictates that finding the baby in your cake symbolizes luck and prosperity. We could all use a little bit of that!

If you were at my wedding reception over 15 years ago, you would know that this isn’t a new trend 😆 I’m so thankful for the friends and family that immediately jumped into help with my idea to not only make my own wedding cake, but one for each of the 50 tables as well. Was it a ridiculous and crazy idea? Yes it was. Would I do it again? Absolutely 😅

A few helpful hints to have the most delicious desserts:

🎅🏻 If you plan to serve your desserts on Christmas Day or later, I recommend keeping items in the freezer until the morning of. Cookies, vanilla cakes and Schnecken can thaw at room temperature. Cheesecake cake be put in the refrigerator the night before or morning of. It does not take long to thaw.

🎅🏻 While talking about cheesecakes, have you ever tried them frozen? SO good and takes on a completely different flavor and texture.

🎅🏻 Frozen or semi-frozen cheesecakes are the easiest to cut. Using a long, sharp knife (I like to use either a Chef’s knife or Santuko knife) and warm water, you’ll get the perfect, clean cut every time. Wipe the knife between each cut and warm with water. IF you are cutting a thawed cheesecake, the easiest way is with unwaxed and unflavored dental floss.

🎅🏻 The same cutting technique with warm water and a sharp knife works best with sponge cakes/the vanilla cake. Do not cut it frozen though. It needs to be completely thawed so your icing doesn’t separate from the cake when you cut it. Little hint. Cut in long, thin sections across the entire cake. Let your section fall on its side and cut into 2-3 piece rectangles. “Triangle” pieces are such a pain.

🎅🏻 Schnecken: once thawed, move to your serving plate and warm in the microwave at 15-20 second intervals until just warm and soft to your liking. It can also be put on an oven safe plate and warmed in the oven on 300° for a few minutes or until your liking. If you are sharing, cut SMALL! It is very filling.
