Let There Be Cake was created in Brooklyn, IA the summer of 2017. I started baking as a child. Although I had a few detours, I came back to my first love, Baking. After 30 years baking is still what I love to do. I grew up in Colorado, lived in Germany for 2 years while I served in the Army, started a family in California, and have worked as a pastry chef in Omaha for the past 20 years. I never ex
pected I would land in a small town in the middle of Iowa. The people I have met here are even more wonderful than I expected. I know I made the right decision moving here. Although I have taken a few cake decorating classes here and there over the years, I am basically self-taught. I’ve spent several years baking breads, and still love the scent of yeast as the dough is rising. Who doesn’t love the smell of fresh baked bread as it comes out of the oven? That’s something that always draws me in. The more I saw and made decorated cakes, and observed how the designs continued to change I knew I had found my calling. There is nothing like seeing the smile on a child’s face when they see their birthday cake in front of them. The feeling I get when I’ve set up a wedding cake and know that I got to be a part of that special day is best feeling in the world. I am excited to begin again here in Iowa. Let There Be Cake is more than cakes. I offer cookies, bars, breads, holiday goodies, and of course, cakes! If you are looking for something special or if you need allergy friendly baked goods, I can help you out. I have a great menu of gluten free options, and I also have vegan options. I bake from scratch because you cannot beat the flavor of homemade. I like to use real butter, whole milk, and real vanilla. This ensures the best product. I also bake from scratch because it’s a dying art. I think we have a responsibility to our children, to pass on the skills and the love of things made by hand. Whether you are looking for something simple, a 3-dimensional cake, or a wedding cake, I can help you out. I will have some wonderful holiday treats, cookies, and even a gingerbread house for Christmas. I love being able to create, and experiment, so if you have a favorite family recipe that you just don’t have time to make, just let me know.
