My favorite pizza crust! 🍕Crispy on the outside, yet still a little chewy in the middle.

We make these year round in the oven, and have recently started making them on the grill. So delicious! Once you get a go to pizza crust, you’ll (almost) never crave takeout;)

Ingredients:
1 1/2 cups (213g) flour
2 teaspoons (9g) baking powder
1/4 teaspoon (2g) baking soda
1 teaspoon (6g) salt
1 1/2 cups (380g) plain greek yogurt
* Note: you can also use 1 cup greek yogurt (250g) and 1/2 cup sourdough discard (145g)
Olive oil, for brushing
Parchment paper

Method:
Combine all dough ingredients in a mixing bowl. Dump onto a floured surface and give the dough a few kneads so everything is well combined. Dough may be slightly sticky. Let rest for 15 mins. Divide dough into two. Place dough balls on parchment paper, sprinkle with flour, and roll out to desired thickness.

Oven method:
Preheat your oven to 375 with a pizza stone or cast iron skillet. Let heat for about 45 mins. Once hot, place pizza dough (with desired toppings) parchment side down into the oven. Bake for 10-12 mins, or until crispy on the bottom and cheese is melted. Take out of the oven, remove from parchment, slice and enjoy!

Grill method:
Preheat your grill to 425. Make sure your grill is clean and well oiled. Brush the top of your dough with olive oil. Place dough directly on grill (oiled side down, parchment side up) and cook for 3 mins. Remove from grill and place desired toppings on the dough (the side with grill marks). Place dough (parchment side down) back on the grill for about 5 mins, or until bottom is crispy and cheese is melted. Take your pizza off the grill, remove from parchment, slice and enjoy!

This weeks lunch prep😮‍💨🤌🏻

Grinder salad inspired chicken salad

Ingredients:
2 heaping cups chopped chicken breast (I used rotisserie)
1/4 lb pepperoni (can use salami, or both)
1/2 cup feta (can use 1/4 cup each of feta and provolone)
1/3 cup banana peppers, diced
1 tomato, diced (can use grape tomatoes)
1/2 red onion, diced

Dressing:
1/2 cup plain greek yogurt (can use mayonnaise)
1/4 cup grated Parmesan
3 tablespoons red wine vinegar
2 tablespoons banana pepper juice
1 teaspoon oregano
1 tablespoon minced garlic (can use 1 teaspoon garlic powder)
Salt
Black pepper

Method:
Combine all dressing ingredients in a mixing bowl. Set aside and give the mixture a few minutes to mingle while you are chopping the rest of the ingredients. Add chicken, pepperoni, feta, banana peppers, tomato, and red onion. Stir to combine. Store in an airtight container in the refrigerator. Serve on a bed of mixed greens, in lettuce boats, with crackers, in a sandwich, or in a wrap. The options are endless!

Everyone needs a go to banana bread recipe!

Ingredients:
1 cup sugar (I only used maybe 3/4 cup)
1/2 cup butter
2 eggs
3 bananas, mashed
1 cup sour milk (add 1 tablespoon white vinegar to your measuring cup and fill the rest with milk)
1 teaspoon baking soda
1/2 teaspoon salt
2 cups flour
Optional: chocolate chips, peanut butter, nuts, etc.

Method:
Preheat your oven to 325. Cream butter and sugar. Add eggs. Add mashed bananas and sour milk. Add baking soda, salt and flour. Fold in any chocolate chips, peanut butter, nuts you would like. Place in two greased loaf pans. Bake for 50-60 mins.

Homemade Granola Bars

These are so so yummy and have become a weekly staple in our food prep. Way cheaper than store bought, and with ingredients you can pronounce! So fun to experiment with different flavors once you get the base recipe down!

Base Recipe:
1 cup peanut butter
Heaping 1/2 cup honey
3 cups rolled oats
1/3 cup chocolate chips

Method:
Mix the honey and peanut butter in a mixing bowl. Add the oats and mix until well combined, then fold in chocolate chips. Flatten mixture onto a parchment lined baking sheet and place into the fridge until set. Once set, slice into bars and store in the fridge.

Notes:
- In this batch, I used 2 1/2 cups oats and 1 cup Rice Krispies to add a little crunch. I also subbed the chocolate chips for butterscotch.
- I use 1/2 powdered peanut butter and half regular peanut butter
- If using a thicker peanut butter, pop it in the microwave with the honey for a few seconds to thin it out
- Experiment with different flavored chocolate chips, nuts, raisins, freeze dried strawberries, sprinkles, etc.

Do you want fresh, homemade cinnamon rolls for your Easter brunch, but don’t want the hassle of making them? Let me take the load off!

This Easter, I will be offering take and bake sourdough cinnamon rolls! (And frosting of course😉)

All pickups will be on Friday (3/29). The rolls are good for up to 3 days in the fridge. Just let the rolls rise, bake, and frost if you wish.
