Ok focaccia update lol
After I divide the dough into its respective baking pans, I let them rise then i go to work.
This one was 8 hours in a cool kitchen, it could go longer, but I'm trying not to get it too acidic.

Okay, here we go: second set of coil folds, then a couple more times, and let it continue fermenting. And then Divide and put them on the baking pan. I use 8x8 pans.

Today i mix focaccia dough, it has a higher hydration than my regular dough around 80-85%

Here you see i added the olive oil late in the process and also used the rubaud method as well which is a great mixing technique for higher hydration/wet sticky dough.
