What looks like a simple bowl of frothy meringue is actually one of the most important steps in creating beautiful royal icing. ✨

Before a single color is mixed or a single cookie is decorated, I take the time to properly froth my meringue powder. This step helps break apart stubborn clumps, evenly distributes flavor, and incorporates the aeration needed for a smoother, more consistent icing throughout the decorating process.

A well-prepared meringue base can mean the difference between icing that performs beautifully and icing that develops issues like uneven consistency or cratering after decorating.

Cookie decorating is equal parts art and science, and the magic begins long before the first design is piped onto a cookie. 🍪💕
