Sourdough baking tip:
Try a second expansion score at 7 minutes into your bake and see if you can maximize your dough expansion allowing for a bigger rise before the heat seals it shut.

Hey Crusties! Im just gonna call this the “Sourdough Wall of Fame”. I had to share these beautiful loaves and messages Ive been getting from all of you. 🥰 they make my heart happy!

Love getting updates and seeing the pride you all have in your loaves. Good sourdough bread doesn’t happen by accident.

Sourdough Discard White Chocolate Raspberry Muffins on a Sunday morning. Yes please.

This recipe was adapted from Little Spoon Farm’s Blueberry Muffins. I added milk and eliminated the crumb topping. And of course substituted raspberries for the blueberries and added white chocolate chips.

What is autolyse?

Autolyse is a simple step in bread baking where you mix just flour and water and let it rest before adding salt and yeast/starter.

What it does:
• Hydrates the flour fully
• Starts gluten development naturally
• Makes dough smoother and easier to handle
• Can improve flavor and texture

How it works:
• Mix flour + water until no dry spots
• Let sit for ~20–60 minutes (sometimes longer)
• Then add your salt and starter/yeast and continue as usual
