Ever wonder what makes sourdough REAL sourdough? 🥖 I often check out “sourdough” bread at the store for fun. Flip it over and you might find yeast in the ingredients. Here’s an example from today.

Traditional sourdough doesn’t use yeast to rise. It’s naturally leavened with a living starter made from flour and water, and fermentation does the work, which takes time.

Why does it matter? Fermented sourdough gives the natural bacteria and wild yeast time to break down some of the carbohydrates in the flour, which can make it easier for some people to digest than quickly risen yeast bread.

That doesn’t mean this is bad bread! It just means that seeing “sourdough” on a package doesn’t necessarily mean it was made using traditional sourdough fermentation.

At Manette Sourdough Stand, my loaves are naturally leavened with my very happy sourdough starter, no yeast. Just time! 🥖

Next time you’re grocery shopping, flip over a “sourdough” loaf and check the ingredients for yeast. You might be surprised!
