Thank you for coming to my page.
I am a retired Chef from a Ivy league College with more then 40 years of working in a institutional setting.
I started out in the 70's working at the famous Kay Pot Tree in south Florida. From there I went on to New Orleans to do a apprenticeship. I lived on the Bayou and learned how the Cajun people lived off the land and thankful they showed me their ways of life. They taught me how to fish and how to cook their recipes.
From there it was on to Texas where I learned New World cooking. Chef's from Europe had spend time with me to show me their culture.
I made my way to El Paso to learn the Spanish culture with more scratch cooking . I cooked with tortillas and moles. I learned the difference of the people and different recipes of their tiny towns.
I spent 10 years of traveling and doing apprenticeships out west then found myself in NY with the richness of foods and culture. I went on to learn sour doughs , the art of bread.
I won many Chili cook offs and 7 War of the Chefs with my recipes from meats to my deserts.
Working at the College my recipes have been tested through a captive audience of 85 young people at a time.
