Scones mean different things in different parts of the world. They can be buttery, flaky, crumbly, sweet, savory, as an accompaniment, a breakfast food, a dessert.

Tomorrow we’ll be bringing 2 scones to the Syosset Farmers Market: a simple, barely sweet vanilla bean glazed scone that goes beautifully with any jam you can imagine (hint: Pams Jamz Traditional X Specialty Jams are the only jams we will ever use on our scones), but not for those who are seeking out a maximalist scone, but just a flavorful balance between sweet and savory; and a cheddar chive scone that doubles as a meal on its own or the perfect vehicle for an open-faced, jammy egg sandwich.

I am OBSESSED with making focaccia now that I’ve found myself suddenly baking bread. So much so that I just tested 4 versions, only one of which was planned, and the planned one is the one I actually don’t like much!

I’ll be sharing with some more of our taste testers to determine which ones are going to market, but I’m already thinking about the cheeses, meats, jams and condiments that go fabulously with these flavors!

Like most breads, focaccia needs time to proof. However, the method of proofing differs from a standard bread due largely to the high-hydration of focaccia dough. Much like a sourdough (nope, still not making it!), our focaccia bread gets fermented in the refrigerator. The longer the fermentation, the more bubbles you get like in this picture. Our focaccia is proofed for a minimum of 24 hours before getting pulled from the fridge where they will then be portioned and go through a second proof. Without these steps and time, you lose out on the texture you only get with focaccia - those pockets of air in the finished dough and that springy texture that gives it that chew.

So no, you can’t have your focaccia ready tomorrow. But the wait is truly worth it.

Couldn’t be more appreciative of the community today! We sold out of focaccia, crownies and chocolate chip cookies and had such amazing feedback on our whole wheat loaves as well! We will be back in Syosset in 2 weeks and will add bread to our local delivery offerings if the demand is high enough.

Just remember, sourdough is not in our repertoire, because keeping one more thing alive may just be the end of me! 😜

Bread has not been our thing, with some exceptions. Sourdough will NEVER be our thing (see John DellAquila for that!). But recently, we’ve been informed that there’s been a shortage of bread vendors that are available regularly and the people are clamoring for carbs!

Never one to let the community down, we’ve been working on some new bread recipes and accidentally created a whole wheat loaf that balances the hearty, earthy flavor of whole wheat with the soft, fluffy texture of your favorite childhood white bread. The slightest hint of sweetness comes from an unexpected source and the resulting texture is anything but dry.

We will be bringing our whole wheat loaves along with other types of breads to the Syosset Farmers Market on Saturday, August 1.
