There’s something so warm and comforting about an old fashioned bread & butter pudding. It’s also a wonderful way to use up leftover breads, especially challah!

This recipe can easily be doubled!

Ingredients
4 Cups (8 slices) cubed white bread
1/2 Cup raisins (optional)
2 Cups milk
1/4 Cup butter
1/2 Cup sugar
2 Eggs, slightly beaten
1 tablespoon vanilla
Jam of choice (I use apricot jam)

Heat oven to 350°F.
Slice bread, remove any hard crusts, and spread with butter and jam.
Place in a prepared casserole dish which has been sprayed with non stick spray.
Add raisins if using.
Combine milk, eggs, sugar & vanilla.
Pour this milk mixture over bread; and allow to stand for 20 minutes.

Bake for 40 to 50 minutes or until set in the center.

Serve warm with custard or vanilla ice cream!

I have made this recipe Parev (non dairy) very successfully by replacing the milk with non dairy whipping cream, and the butter with dairy free or vegan marg.

Portuguese chicken

Delicious and flavorful Portuguese chicken & potatoes! So easy to make, and a one dish meal if you add veggies!!

Per 1 chicken plus baby potatoes add the following :
whole head garlic
1 t kosher salt
3 -5s ml peri peri powder
180 ml oil
90 ml white wine vinegar
Marinade chicken for 1 hr
(I skip the marinade step if I don’t have time)

Bake at 400/200 till the chicken and potatoes are golden brown and cooked through.
(Approximately 1-1.5 hrs)

I used to love the Mosbolletjies from Checkers in Sea Point, and couldn’t find anything that was remotely similar in Florida! That left me no choice but to make my own!

Ingredients:
4 &1/2s cups of self raising flour
125 grams of butter
2 eggs
1 sachet of instant yeast ( 10 g)
4 Tablespoons of sugar
2-3 teaspoons of Aniseed
1 teaspoon of salt
2 Tablespoons of oil
1 Cup of warm milk

Method:
Rub butter into flour , add the rest of the ingredients and mix till a soft dough is formed.
Shape the dough (which will be soft) into 16 round balls.
Spray 2 loaf pans with non stick spray, and place 8 balls of dough into each loaf pan.
Egg wash or brush with a little milk and bake for 25-30 minutes until golden brown.
Immediately upon removing the pans from the oven, brush the Mosbollekies with smooth apricot jam.

So delicious!!
