I have always loved to bake and create delicious foods from simple ingredients. Karen Peterson DBA Confections by Karen is a registered cottage food producer with the Minnesota Deparment of Agriculture and "These foods are homemade and not subject to state inspection.

🥰 While I wasn’t one of the first people to get involved in cottage food law passed in Minnesota I did start helping with the movement in early 2013. Amazing to hear that Minnesota now has over 16,000 registered cottage food producers.

🥰 A trip down memory lane with this article published in the Steele County Times back in 2017. This couples wedding was the biggest I have ever done in the history of my registered cottage food producers journey - 425 cupcakes in 3 or 4 flavors if I recall.

🏫 A day taken off from substitute teaching at school to prepare all of the components of my Luscious Lemon Cupcakes & Chocolate Salted Caramel Cupcakes.

⏰ The day started early with 2 double batches of vanilla buttercream, 🍋 lemon curd & salted caramel sauce. Then I made gluten friendly sugar cookies topped with vanilla buttercream and salted caramel sauce or lemon curd. 🥰

🥪 A quick break for lunch and then made 128 cupcakes 🧁. Filled and frosted them all afternoon to prepare for the Blooming Prairie Area Chamber of Commerce Annual Banquet happening tomorrow evening.

Looking 👀 forward to honoring Sadie Steele at tomorrow’s banquet and having her get to enjoy the lemon filled cupcakes she requested. ☺️

🥰 Happy 12th Birthday to my Eli who is full of s***k and is a bit spicy.

🥰 He just finished a gaming party with some friends and enjoyed his cake I was able to put together this afternoon.

📌 Chocolate Cake with Chocolate Buttercream, Moldable Buttercream accent pieces, hand painted Ghirardelli V Bucks, Marshmallow Med Kits and a pickaxe ⛏️.

💜 Another long day between substitute teaching, chamber work and making a double batch of rolls for an order due tomorrow and rolls for my family Christmas. I’m spent. 😴 Looking forward to a few days off from teaching and maybe a day or two off from the chamber. 🥰

🥰 Will you be my Bridesmaid and Maid of Honor Cookies I recently completed for a local bride to be.

🥰 While I typically decorate with royal icing, due to the tight timeframe these were decorated with American Buttercream.
