Sourdough bruschetta anyone?
This is one of our favorite ways to eat sourdough.
Sourdough Bruschetta
Serves: 1 person
Prep Time: 15 minutes
Rest time: 30-60 minutes
Cook time: 5 minutes
Total time: 1-1.5 hours
2 slices sourdough bread, whole or halved
1-2 Roma tomatoes, chopped
1 bunch fresh basil
2-3 tablespoons your favorite olive oil
1-2 cloves fresh garlic (roasted is best)
4 slices of fresh mozzarella cheese
*optional* 2 teaspoons balsamic vinegar
Fresh ground salt & pepper to taste
In a large shallow bowl add the olive oil, balsamic vinegar, salt and pepper, and basil. Stir to combine. Add the tomatoes and toss to coat. Cover with plastic wrap and let sit for 30 minutes to 60 minutes so the flavors infuse in the tomatoes.
Toast the bread. If your bread isn’t pre-sliced, slice it around ¼-½ inch thick. Turn the oven to 450ºF. Place the bread slices on a large baking sheet. Brush the bread slices with a little olive oil until the edges start to darken (about 5 minutes).
Rub the fresh or roasted garlic over the toasted bread. Adjust amount based on personal preference. Rubbing about a half a clove on one side or spreading roasted garlic on the bread. Set bread aside.
Top the bread with the tomato bruschetta mixture, then top with fresh mozzarella on top. You can also broil or air fry after assembling for warm bruschetta.
Top with a drizzle of olive oil and balsamic vinegar and extra basil. Enjoy!
