iHeart Einkorn is a bakery promoting healthy nutrition and digestion. We use only organic einkorn wheat flour, grown in Italy, in all of our products.

Hello local customers! We have a wonderful new store in nearby Newcastle, Happy Heart Homestead mercantile and they have fresh local produce as well as other locally made goods. I was wondering if anyone would be interested in picking up my bread there as well. At first I would probably bake once a week, including a few small loaves as well as pre-orders. Most people find einkorn when they discover they have a gluten intolerance, but it's important to know, einkorn is a nutrient-dense food, well balanced between carbs, proteins, and fats. It is high in lutein (for the eyes and heart), and the overall B vitamin complex. It is high in beta-carotene, which is why it has such a lovely golden color. It's ideal for diabetics because it won't spike blood-sugar like modern wheat can, and actually helps diminish cravings for more carbs. It is satisfying and enduring--meaning that it gives me great energy and I don't need to eat again for hours. I've had customers tell me that they have healed their gut because they ate einkorn sourdough. I've had people buy the sourdough and buttermilk biscuits to lose weight, and be successful! An all-organic, homemade, einkorn bakery. We make everyday goods, like real sourdough loaves, authentic tortillas, buttermilk biscuits, hand and full-sized pies. All sweets are made with coconut sugar to keep the glycemic index low--safe and healthy for diabetics or anyone careful to avoid sugar spikes. In this day and age of the Diabetes epidemic, and the inflammation caused by sugar and processed foods that leads to cancer and other serious immunity-robbing diseases, it's now imperative we carefully monitor all sugar intake. I did not eat any sugar for over 2 years, and then gradually added in natural sugars such as dates, raw honey, molasses, grade B maple syrup, and now coconut sugar.
