Our front of house team is growing! We’re hiring part-time retail counter staff and baristas to our team.

Weekend availability is required. Barista experience is preferred, but we care just as much about attitude, kindness, and reliability.

Hi, I’m Lacy!

If you’ve been into Bandit over the past few years, there’s a good chance we’ve already met — behind the counter, at Pepper Place, or somewhere in the middle of a busy morning.

I’ve been creating some of your favorite pastries and testing new flavors for almost five years. Bandit has the best team in the kitchen and behind the counter, and I’m looking forward to what’s next for us.

Thank you for making Bandit part of your life. I’m grateful to continue baking for you and our community for years to come.

It’s a new chapter for Bandit.

After more than a decade of building this little bakery into what it is today, founder is passing the torch to co-owner who will lead Bandit as the sole owner. Two women who fiercely love Bandit. ❤️

If you’ve been here for a while, you know Lacy has been a part of the Bandit team for years, shaping everything from what’s coming out of the ovens to how the days unfold. There’s no one better to carry this legacy forward.

To Kristen, thank you for dreaming this up and building something so special. Your hard work and perseverance has created something wonderful for all of us. Best wishes to you at !

At Bandit, hospitality and service are the community-driven tenets of who we are as bakers and how we show up for our guests. What we do only works because of our community – neighbors, guests, friends, and strangers who all become part of our shared table. In moments like these, hospitality extends beyond feeding people. It means caring for them, standing with them, and using what we have to serve them with intention and love.

Inspired by our friends at Cala Coffee, we’re donating a portion of our sales to .alabama, to help our local community. We’re also donating a portion of our sales to , Minnesota’s largest food pantry, which is doing critical, on-the-ground work to support those directly in need by delivering emergency Care Packs to people’s homes.

Our Holiday Shop is now open! Gingerbread Village Cakes have returned! The store is filled with pies, cakes, tarts and morning pastries to make your holiday festivities that much sweeter. Pickup is December 24th from 8-12 at Bandit HQ. ❄️🤍🎄
