After nearly 7 years, I am moving on. I have developed a gluten issue that has made eating bread a thing of the past for me. I am enormously grateful to all of you who supported me throughout the years. Thank you to everyone who bought even one of our estimated 50,000 loaves or 100,000 pastries. Normandy Apple Sourdough!
It starts with picking local honeycrisp apples, and then peeling, coring, and slicing them thin. They are then dried in an oven at low temperature to reduce moisture and concentrate the flavor. These are then incorporated into a long rising sourdough that is made with apple cider instead of water. The result is a sourdough bursting with natural apple flavor. It’s a once a year bread for us.
