We sprout ancient grains and seeds in glacial fed Montana water, and a touch of apple cider vinegar.
Sprouting grains and seeds before milling increases nutrients, fiber, protein, and enzymes, while removing anti-nutrients like phytic acid, and lectins. Bread is no longer digested by pancreatic enzymes like a carbohydrate, rather it is digested more like a vegetable with vegetable enzymes. Fermenting the dough (sourdough) provides some similar effects. Soaking and fermenting are forms of pre-digestion, making this bead easier to digest with more bio-available nutrition.

Plentiful with organic cacao too.
A nutritious cookie that tastes incredible!
