It was definitely not soup weather today, but this just sounded good. So, here is the recipe for Chicken Tortilla Soup for you all to enjoy also ๐Ÿ™‚

Olive oil

1 onion, chopped
3 cloves garlic, minced
1 jalapeรฑo pepper, diced

1 tsp ground cumin
1 tsp chili powder
1 lb chicken breasts
20 oz Rotel
32 oz chicken broth
14 oz can black beans, drained and rinsed
14 oz can corn, drained and rinsed
1/2 C cilantro

1 lime, juiced
Salt

*Everything cooks in one pot
Put enough oil in pot to cover bottom.
Turn heat to medium high.
Add onion, garlic, and jalapeรฑo. Saute until soft
Add everything else, except lime juice.
Bring to a boil and let simmer at least 25 minutes
Remove chicken breasts, shred, return to pot
Add lime juice.
Add salt to taste.

*We fried Tortilla strips to put in the soup. Just regular tortillas cut however you want and fried in a little vegetable oil on the stove top.

You can top with cheese and/or sour cream.

*The picture actually has more chicken than the recipe calls for. I doubled the recipe, but added 3 pounds of chicken instead of 2.

Banana Pudding

2 C milk, cold
1 tsp vanilla
2 (3.4 oz) instant vanilla pudding
1 (14 oz) sweetened condensed milk
2 C heavy whipping cream
Vanilla wafers
4 bananas, sliced
3 TBSP powdered sugar

Beat cold milk, vanilla and pudding until it thickens.
Pour in condensed milk and beat to combine.

In separate bowl, beat heavy cream until stiff peaks form.

Add about 2/3 of whipped cream to pudding and fold in.

Add powdered sugar to remaining whipped cream and beat again.

Layer wafers, bananas and pudding. Top with whipped cream and sprinkle vanilla wafer crumbs on top.

Yum!!! ๐Ÿ˜‹๐Ÿ˜‹

This recipe combines a couple of things that are delicious enough to stand on their own, but even more delicious combined!

Banana Pudding Cheesecake ๐Ÿฎ ๐ŸŒ๐Ÿ˜‹

1 1/2 C finely crushed vanilla wafers
1/2 C chopped pecans
1/4 C butter, melted

20 vanilla wafers

2 ripe bananas, diced
1 TBSP lemon juice
2 TBSP brown sugar

3 packages cream cheese, room temp
1 C sugar
3 eggs
2 tsp vanilla

1/2 C coarsely chopped vanilla wafers

Preheat oven to 350.
Stir together first three ingredients until well blended. Press into greased 9 inch springform pan.
Stand vanilla wafers around edge, rounded edge against pan. Press into crust to secure.
Bake 10 minutes, cool completely.

Combine bananas and lemon juice in small saucepan. Stir in brown sugar.
Cook over medium heat, stirring constantly 1 minute or until sugar dissolves.

Beat cream cheese until smooth.
Add sugar--beat.
Add eggs, one at a time. Beat until just mixed.
Add vanilla.
Stir bananas into cream cheese mixture and then spread into springform pan.
Bake 45 to 55 minutes or until center is almost set.
Remove from heat, sprinkle vanilla wafers crumbles on top.
Can also decorate with whipped cream after chilled.
Let the Cheesecake come to room temperature and then put in refrigerator at least four hours. Longer or overnight is better.

Sorry for falling behind on recipes! I've got a good one to share. These were really popular and soooo delicious!!

๐ŸŒ๐ŸŒ Banana Bread Brownies๐ŸŒ๐ŸŒ

1 1/2 C sugar
1 C sour cream
1/2 C butter, room temp
2 eggs
4 ripe bananas, mashed
2 tsp vanilla
2 C flour
1 tsp baking soda
1/2 C chopped walnuts

Brown butter frosting:

1/2 C butter
1 1/2 tsp vanilla
3 TBSP milk
4 C powdered sugar

Heat oven to 375. Prepare pan (9 x 13 will give you thicker brownies, larger pan will give you thinner ones)
Combine sugar, sour cream, butter and eggs. Mix until creamy.
Blend in bananas and vanilla.
Add flour and baking soda.
Stir in walnuts.
Spread into pan, bake until knife inserted in center comes out clean. (Usually at least 20 minutes.)
For frosting, heat butter in large saucepan over medium heat until boiling. Let butter turn delicate brown and then remove from heat immediately.
Add rest of ingredients and stir into browned butter.
Spread over warm brownies.
Sprinkle walnuts on top.

๐Ÿ˜ Cheesecake Recipe ๐Ÿ˜

When I was very young, dad LOVED Jello no bake cheesecakes. I would help him mix them up until I was old enough to fix them myself. He loved cherry topping on them. We both thought it was the best dessert in the world!

When I was older, I realized that "real" cheesecakes are baked. I had no idea! And honestly, the first one I tried wasn't what I was used to so I didn't even like it! It didn't take long for that to change...

I love all desserts, but cheesecakes are still right up there at the top of the list. We made several different flavors at the bakery, so I will have lots of cheesecake recipes to share. Tonight, I'm sharing our most popular flavor. Pecan Pie Cheesecake.
Strangely enough, it was the only no bake cheesecake we made. No one could tell, not that we hid that fact if anyone asked. This may have been a little fancy for dad, but I bet he would have at least tried a piece, or two, to give it a fair chance ๐Ÿ˜‰

Pecan Pie Cheesecake

Crust:

1 1/4 C flour
1/2 C sugar
1/2 C butter, very soft

*Preheat oven to 350. Combine all crust ingredients. Press into a 9 inch springform pan. (You may want to cover the bottom flat part of the pan with parchment paper and then spray pan with vegetable oil spray.)
Bake 20 - 25 minutes. Should be golden brown.

Prepare pecans while the crust is baking.

2 C Pecan halves
2 TBSP butter
3 TBSP sugar

Melt butter in skillet. Add pecans and sugar. Cook over medium heat 7 - 8 minutes. DON'T FORGET TO STIR THESE!! They burn before you know it, and pecans are expensive!!
Set aside to let cool.

Filling

1 C heavy cream
16 ounces cream cheese
1/2 C sugar
1/2 C brown sugar
2 tsp vanilla

Beat heavy cream until stiff peaks form and set aside.
Combine all other filling ingredients in separate bowl and beat until smooth.
Fold heavy cream into filling mixture.
Stir in pecans--save some to sprinkle on top.
Spread into crust.
Top with reserved pecans.
Refrigerator at least 4 hours.

**As always, we used generic brands.
But, watch the Pecan prices. Occasionally brand name was cheaper than Walmart brand. And they don't have to be halves, they can be pieces or whatever you want to use.

โญ๏ธโญ๏ธ Today I have some Keto recipes to share. These are SUGAR FREE and GLUTEN FREE. If you don't need one or the other, substitute real sugar and these are still gluten free. If you don't need gluten free, substitute all purpose flour and you still have sugar free. BUT if you need a sugar free diet, you really should keep the recipe as it is. You are probably trying to limit overall carbs, and regular flour is full of them!
These were taken from a page that I follow. All Day I Dream About Food. She has alot of recipes on her page and they all look delicious! I didn't try nearly as many as I wanted to, but I did like the ones I am going to share.
The good thing about this stuff is that it can all be bought at Walmart now. There was a time not too long ago, that this stuff had to be ordered. If there is a generic brand of almond, coconut, or gluten free flour that is what I used. This stuff is more expensive than regular flour and sugar. But if you're a diabetic or have a gluten allergy or are trying to lose weight, a little treat now and then has to be had!!
Also, the site I mentioned uses Swerve in almost all of her recipes. I switched to Monkfruit because it doesn't have to aftertaste that Swerve does. There are options, so if you try one and don't like the taste, try another sweetener option.
These recipes are actually printed out so I'm going to add the pictures and hopefully they will come through and make sense.

๐ŸŽTonight I've got a couple recipes to share. First will be Apple Dapple Bars. These are good hot or cold, by themselves or with ice cream. They are really good! Depending on how thick you want them, you can use either a 9x13 or 11X14 cake pan. The recipe doesn't really rise much, so you don't have to worry about it cooking over.

3 C flour
1 tsp salt
1 tsp baking soda
1 C chopped pecans
1 C vegetable oil
2 C sugar
3 eggs
2 tsp vanilla
3 C apples, peeled and chopped

Caramel sauce:
1 C brown sugar
1/4 C milk
3/4 C butter

Stir oil, sugar, eggs, and vanilla together.
Combine dry ingredients and then stir into wet ingredients.
Fold in pecans and apples.
Place in pan and bake at 350. Start checking it at 20 minutes. (I really don't remember how long it took. When I smelled stuff, that's when I checked it ๐Ÿคทโ€โ™€๏ธ).

For the caramel sauce, place all 3 ingredients in a small pot over medium high heat.
Stir constantly, bringing to a gentle boil.
Continue to Stir and cook for 3 minutes.
Pour over hot cake while still in pan.
Cool completely and then cut and Serve.

**These freeze well.

๐ŸชNext recipe is White Chocolate Cranberry Oatmeal Cookies. These were very popular, too. And easy. Some recipes you just can't improve, unless you add chocolate and cranberries ๐Ÿ˜
The oatmeal cookie recipe is from the Quaker oatmeal lid. I'll type it out here, but that's the best oatmeal cookie I've ever had, so that's what I used!

1/2 C plus 6 TBSP butter, softened
3/4 C brown sugar
1/2 C sugar
2 eggs
1 tsp vanilla
1 1/2 C flour
1 tsp baking soda
1 tsp cinnamon
3 C Quaker oats (quick or old fashioned)
1 C Craisins
1 C white chocolate

Beat butter and sugars until creamy.
Add eggs and vanilla, beat well.
Add flour, baking soda and cinnamon, mix well.
Add oats, craisins and chocolate, mix well.
Roll into TBSP (or bigger ๐Ÿ˜Š) sized balls and bake at 350 for 8 - 10 minutes.

*You can add more or less of Craisins and white chocolate.

* You can stir in apples and pecans instead. That would actually be delicious with a cream cheese frosting between 2 cookies and maybe even drizzle some caramel sauce over it ๐Ÿค”๐Ÿ˜‹

Cream cheese frosting:

1/2 C butter, softened
8 oz cream cheese, softened
1 tsp vanilla
4 C powdered sugar

A cookbook sounds like fun, but it also sounds like a lot of work! I'm definitely not committing to that yet. It would be nice to have these all organized just for myself, but that may be later down the road. Plus, there really aren't any secret family recipes. Google is an amazing thing! ๐Ÿ’ฏ

Many of the recipes we found, we tweaked them a little so they tasted good to us. Many recipes we used exactly the way they were written. I don't know the rules about putting other people's recipes in a cookbook...

Today was a long day, so I'm going to share an easy recipe tonight. Our spaghetti was unlike any other I have ever had. It was just one of those recipes we came across, tried it, tweaked it a little, and loved it. Apparently some of you loved it too. We didn't use a red sauce. It pretty much had all the same ingredients as a chunky tomato sauce, but we used rotel instead of tomato sauce.

As much as I hate "a pinch of this" or "a little of that", it really does depend on your taste. So, I'll use those phrases as little as possible. Just remember to taste it along the way to make sure you've got enough seasoning.

1 lb spaghetti noodles
1 lb ground Italian sausage
1 onion, diced
1 bell pepper, diced
28 oz Rotel, undrained
Italian seasoning, at least 1 TBSP
Salt, to taste
Pepper, to test
Shredded parmesan

Boil the spaghetti with a little vegetable or olive oil so the noodles won't stick. Just pour a little in, possibly 1/4 of a cup but I really don't know.

Start browning the Italian sausage. Once it's all crumbled/separated in the pan, add the onion and pepper.
When the sausage is browned and vegetables are softened, drain the grease off. There isn't much, usually.
Return sausage and vegetables to the skillet and add the undrained Rotel. Heat it a little so it kind of blends flavors, then add Italian seasoning, salt and pepper.
This is where you start tasting. I would add at least a teaspoon of each salt and pepper and then go from there. We used more salt than pepper and we probably used closer to 1 1/2 TBSP of Italian seasoning.
Pour the sausage mixture over the drained spaghetti noodles.
If you top with shredded parmesan, that will add a little salt taste also.

*we used green or yellow bell peppers for color. Green are usually cheaper and taste exactly the same in a recipe.

*we used Walmart brand Italian sausage. Tastes great, cheaper than brand name.

*we used generic Rotel that we got from our food vendor. I'm sure the Walmart brand would be just the same and cheaper.

โœจ๏ธJust remember that even if you do exactly what we did, it might not taste exactly the same to you. Just like when someone else fixes a sandwich, it tastes better ๐Ÿ˜Š
