Vermont Vanilla

Vermont Vanilla Chocolate just got some competition Don’t get us wrong, we love chocolate, we really do. That makes Vermont Vanilla a good buy as well as a smart purchase.

But we’ve also started to appreciate the rich and subtle essence of really good vanilla - like the vanilla flavor produced by Vermont Vanilla pure
extract. What makes Vermont Vanilla soooo good is the careful blend of vodka and rum that is used to extract the vanilla oils from Madagascar vanilla beans, the absence of additives. sweeteners or artificial coloring of any kind, plus an aging process

that proves the adage “good things come to he (or she) who waits.” The result is an amber vanilla extract so warm in color and so potent in flavor we recommend you use half the
amount your recipes calls for. So try some in your favorite recipes for cookies, cakes and brownies. After all, Vermont Vanilla Pure Extract doesn’t replace chocolate – it completes it. You really have to be aware and read labels carefully. I have always avoided low fat buttermilk since it is not good for baking and I knew buttermilk is naturally low in fat anyway. Unfortunately, I needed some for pancakes and the reduced fat variety was all that was offered. I had to laugh when I compared the label of the reduced fat with regular cultured buttermilk😄. Beware!

Pretty little cake for a longtime customer’s birthday. Three-layer chocolate cake with toffee-filled chocolate frosting between the layers, sea salt caramel frosting on sides and top, then a layer of chocolate glaze finished off with chopped toffee! Can you say rich😄

I guess not everyone is into food and food history since I recently scored these on a cart of free books at the Williamstown library. They were taken out of circulation due to lack of interest but I’ve been eating them up 😄. I finished American Pie over the weekend (and, boy, do I feel like baking a pie!) and am reading the ice cream one now. If anyone is interested in borrowing one or more let me know!

I will start the ball rolling on some baking posts. I made croissants for the first time this weekend. They were time consuming but not hard. You just have to plan ahead so they have time to chill between folding. They came out crisp and flaky and my tasters all enjoyed them. I was very proud of the lamination in the dough, where dozens of layers were visible😊

After long and thoughtful consideration I have decided it is time to discontinue Vermont Vanilla's participation in the Bennington Farmers Market. This was a very difficult decision to come to as I love interacting with the lovely people who visit and vend at the market. It has been my privilege to sell my homemade vanilla extract and sugars, flavored extracts and baked goods these past five years and I would continue to do so had I not so many competing obligations. Of those, the most important and exciting is the imminent arrival of my first grandchild. My son and his wife will be welcoming a baby boy to the world in about a month and I plan to be around for him and them as much as possible. Between a couple of part-time jobs and Nana duty I just won't have the time and energy to continue my Friday baking marathons on a regular basis.

I do, however, want to continue baking. From time to time I will post pictures of new baking challenges I have taken on. For instance, I'm making a Harry Potter cake for a baby shower in May that is going to be awesome - I can't wait to post pictures here! I will also take orders for whatever you may need for the holidays, special occasions or just a craving.

I would also like to keep this page and make it more about baking. I often wish there was a page out there where people could talk about their baking success, discuss the latest episode of the Great British Baking Show, recommend recipes or cook books or ask questions about some new project they are attempting. I would love to see this become a lively and informative forum for all things baking. If you are interested in those kinds of discussions stay around and help me build the Vermont Vanilla page into the Facebook equivalent of Grandma's kitchen.

Holy moley, the price of vanilla beans continues to shock! I just searched Amazon for a pound of vanilla bean. The best I could do was $450😵! That is a 14-fold increase over the first pound I bought five years ago. Then I scouted the stores and my King Arthur catalog for the price of manufactured vanilla extract - the prices reflect the vanilla bean market crisis, though not anywhere near what the crazy cost of beans might predict. Still, who knows what kind of prices we're looking at in the coming weeks.

That said, I've decided to keep my vanilla prices as low as possible so my friends and customers can get their holiday baking done without going into debt😄. I will bring ten 4-ounce bottles, seven 2-ounce bottles and seven 1-ounce bottles to tomorrow's market and they will sell for $16, $9 and $5 respectively. Please let me know if you want one!
