Here is our 'BETTER THAN PUMPKIN' Pie Filling recipe from yesterdays Pie Dough 101 Workshops for those that missed them. I ate two pieces for breakfast this morning, because ya know, vegetables! We have plenty of our very popular Ready To Use pie dough available in our freezer section. Get it this weekend, while we still have it.
'BETTER THAN PUMPKIN'' Pie Filling
fills two 9" pies
1 appx 3 # Acorn squash
1 appx 1 # Jewel or Garnet yam
8 eggs
1 1/2 C Eberhard's Dairy Products whipping cream
2 t fresh grated fresh ginger
2 t vanilla
1 t salt
3 fl oz GloryBee raw honey
•Cut the squash in half, deseed
•Roast yam and squash in 400 degree oven until soft- about 45 minutes
•Once cooled, scrape all the cooked flesh into the bowl of a blender or food processor, add the fresh ginger and honey salt and vanilla
Pulse until desired smoothness (I prefer mine a bit lumpy)
•Remove to a mixing bowl
• In another bowl whisk together eggs, cream
•Add egg mixture to the squash mix
•Can be refrigerated up to a week
•Pour room temperature mix into a preformed pie crust
•Bake at 400degrees for 10 minutes
•Reduce temperature to 375 degrees and continue baking until filling is set, about 50 minutes
•Let cool to room temperature before serving
Some wonderful additions that can be added if you're feeling it:
•up to 2 shots of espresso (great for breakfast pie😉)
•up to 2 t combined of (cardamom, cinnamon, nutmeg, ginger, allspice)
•2T cocoa powder (add up to an additional 2 T of honey with this)
•substitute some or all of the honey with real maple syrup
Thanksgiving Week we are open from 7-2 Sunday, Tuesday and Wednesday. And for the first time we will be open Thankgiving morning for folks who place pre-orders.
While we continue to experience staffing and supply shortages, we will be limiting our retail days. We are currently open Wed-Sunday 7-2. Closed Monday and Tuesday.
Fresh bread will still be delivered to local markets and restaurants in Central Oregon on the days we are closed here. Please stop by Newport Avenue Market or Market of Choice for your nearest to our location bread needs.

Keep an eye on on Instagram. We will be teaching folks how to begin their own sourdough starter in a day or two.
They can't keep Easter away! Kristin is decorating all the baby things. Pick up bunnies and chicks when you grab your bread and sandwiches. Thanks everyone for waiting outside when there are people being helped inside the bakery. We know everyone is doing the best they can with in this current situation. We appreciate you all so much!
We are still delivering daily to your local Central Oregon grocery stores. As a temporary SAFETY measure we are enclosing all loaves with an interior closed paper bag. Have you tried making toast with our bread that you have stored, sliced in your freezer? It's a well known fact, that sliced, frozen rustic bread makes THE best toast. Tuck away a loaf or two, sliced and wrapped tightly in plastic. Simply toast slices straight from the freezer and to refresh whole table breads - sprinkle with water and place in a 300 degree oven for 10 or so minutes.
An update for our community!
-Kid's Sack Lunches to community kids went great on Thursday and Friday
-PLEASE HELP DISTRIBUTE the FREE LUNCHES we have prepared THIS WEEKEND, food insecurity doesn't go away on Saturday and Sundays.
- We are able to take donations,cash only please, if we have to run your credit card, it is done as a sale and we pay high taxes on any bakery income. Donations will be used to purchase produce and meat for soup production for next weeks lunch sacks and offset our paper goods costs. Gift cards to Costco are another option. We are hoping to make a breakfast bar/granola bar to add to the lunches as well. We can make and serve app 15 kids a lunch of soup and bread with a side of fruit with your $5 donation!
-food product donations can only be accepted from other food service establishments
-we are paying our employees to produce lunches and help the folks coming in. We appreciate all of our loyal customers who are still able to come in to make purchases. This helps out immensely and keeps Village Baker above water.
Much adoration for our beautiful community coming together through this patch of trials.

In partnership with Boar's Head by Hauge and High Desert Produce we will have bagged lunches available starting Thursday for children and youth that are dealing with food insecurities. No proof of your need or purchase necessary. If you need it, just ask for a Kid's Sack Lunch, send your child in or give us a call when you are in the parking lot and and we'll run it out to your car. No need to order ahead unless you are needing greater quantitied. In that case please call Lauren or Kristin at this time.

We are a production bakery through and through. We will remain open using all the best practices to provide all our usual products at our storefront. We have upped our production of our usual freezer section items and will be throwing in a few new products. Feel free to pick up bread, freezer grocery items and our amazing lunches. Call ahead just like usual if it suits you. All breads will remain fresh baked and delivered daily to area markets.
