Pound Cake: I creamed 1 cup of softened butter, 1 cup of butter flavored shortening, 8 ounces of buttermilk and 4 cups of sugar. I added 10 large eggs one at a time. Next, I added 4 cups all-purpose flour, a cup at a time, until it was all incorporated. Lastly, I added 1 teaspoon, each, of vanilla, butter and, banana flavorings. I poured the batter into my greased and floured pan (10-inch, 10-12 cups), and I baked at 325 degrees for 1 hour 45 minutes until a toothpick inserted in the center came out clean. I cooled for 15 minutes before removing from the pan. Moist, delicious and ready for the road! During segregation, black people were limited where they could stop to eat. So, they usually traveled with food. If youāve never seen the movie āGreen Bookā, it shared this history. No, thank goodness, I donāt have to do it. However, when I donāt want to spend a lot of money during long road trips, I have a pound cake, fried chicken or luncheon meat and bread in the back seat! Good eatin! Added note: I used an old pan (picture below) given to me by an older friend. I was prepared for it to spill over, but shockingly, it didnāt. I donāt know if Iāll chance it again. Use the biggest pan you have to accommodate that amount of batter.
