Did you know that rice flour is the best flour to dust your bread with since it doesn’t burn when baked. Wheat flour can burn when baked.

In this 3-stage guide, you can SEE exactly what to look for before mixing your dough.

✨ Stage 1: Just Fed
Thick, smooth, and freshly mixed. Mark the level so you can track growth.

✨ Stage 2: Rising
Bubbles are forming. It’s expanding and building strength.

✨ Stage 3: Ready & Bubbly (PEAK!)
βœ” Doubled in size
βœ” Slight dome on top
βœ” Lots of bubbles throughout
βœ” Light, airy texture
βœ” Smells pleasantly tangy

This is the sweet spot for baking sourdough bread with great oven spring.

If your starter has fallen or smells sharply acidic, it’s past peak. Feed it again and wait for the next rise.
