My bakery horror stories. Let's break it down:
1. Running out of flour mid bake...ugh. It doesnt happen often, maybe 3-4 times a year. But when it does happen, it is such a time suck when I miscalculate ingredients in house vs what we need for the bake. I have to procur ingredients quickly without neglecting what's in process. If we can wait for a delivery and produce the next day, great, but sometimes thats not possible.
2. Wearing the wrong shoes for a 14 hour shift. Even if I wear the super cool compression socks...the whole body hurts. 🫩
3. Power outages. On baking days it sets us behind. But it also causes high anxiety, because EVERY BAKER relies heavily on the freezer. I keep all kinds of ingredients on hand in the freezer. Stock up on summer fruits and freeze so I have a hint of summer throughout the year. We also have certain things that can hang out in the freezer, like pie dough, cookie dough, various fillings that we make in bulk and store to save time. If the power goes down and isn't coming back up before the freezer starts defrosting....we have to find another freezer to move everything pronto.
4. Dough hands and door handles, sink handles, oven handles.....it is my Number 1 kitchen ick. I cannot stand schmudge on handles anywhere, ever. It's not even the germs....its the feeling of it.
5. Is this gluten free? If it came out of our bakery (or any gluten bakery that does a moderate level of volume) consider it cross contaminated. Fun fact 1: it takes flour particles 3 days to settle out if the air once you stop production. And I promise you on day 3 of no production you will walk into a dusting of flour on everything and have to deep clean and sanitize again before you can think of baking gluten free. Fun fact 2: Chef Tanya's sister has suffered from gluten issues for well over 25 years. As a result she knows how to make some pretty good gluten free baked goods(and has for her sister) and even taught gluten free baking courses over the years...but we stay away from it in the bakery, because we never want to take chances with someone's health like that.
