Hello friends. I hope you’re all having a great summer even though the end is drawing near. I wanted to share my latest cake with you. There are a few reasons why I don’t normally use fondant on my cakes. First of all, I’m a perfectionist. Fondant takes a lot of practice because you can see every little imperfection and that gives me anxiety. Also, it doesn’t taste great so i don’t want to put something that doesn’t taste great on my delicious cakes. I made a Toy Story cake a few years ago using fondant and I loved the end result even though it was stressful. Cartoon cakes are all the rage at the moment and when I saw one for the first time I really wanted to try it. Yesterday was my granddaughter‘s birthday and she being a little artist who loves to draw I just knew it would be the perfect time to try it out. I made my own fondant using marshmallows and it was about as tasty as fondant could be. I am very happy with how my 2nd attempt turned out. She loved it which is the most important thing. Im actually looking forward to making more of these adorable, super cool cakes.

Merry Christmas and happy new year friends! Its been a crazy last year and I’m not sure how the upcoming year will be but I know one thing for sure....let us eat cake! And cookies, let’s not forget the cookies. Heres my chocolate Yule log. Filled with chocolate whipped cream and frosted with whipped chocolate ganache. Lets not forget about the merengue mushrooms. Decadent perfection.

Using a milk bread dough I made these beautiful and delicious cinnamon rolls. Cinnamon butter, golden raisins and Texas pecans. Just perfect.

Hi friends. I’m sorry I haven’t posted sooner. I hope you are all staying safe and healthy. Stay in and stay away from people you don’t live with. I have a great idea.....bake something! I just made this delicious pound cake. I really just wanted to use my new cake plate. here’s the recipe my friend Donna shared with me. I used 3 sticks of butter because I didn’t have margarine and I added mini chocolate chips. enjoy! God bless you all.

I had a request from my friend to make her bacon potato chip brownies so here ya have it. The recipe is from Trisha Yearwood on the foodnetwork. The fat from the bacon is used in the batter. I chopped 1/4 lb of bacon and added that to the batter along with a cup of crushed potato chips. More chopped bacon was added to the top along with extra chocolate chips. Salty, sweet and fudgey. Think you’d like that combo?

Ahhhhh summer, how we love this time of year and what better way to welcome it than with pies. My son Chris loves them so for Father’s Day I made him 2....coconut custard pie and a chocolate cream pie. I also made a trifle with lemon pound cake, lemon curd and blueberries. Be careful when toasting coconut. It goes from not done to burnt in seconds.

Assorted Cookie trays aren’t just for Christmas. Pretty trays for a baby shower and church luncheon went out today. Most of the time I prefer cookies to a cake. Ok, ok, in addition to a cake. :). Today we made lemon/raspberry thumbprints, crunchy chocolate snaps, Italian knots, Greek sesame butter cookie twists and Spumoni cookies.

They say everyone is Irish on St Patrick’s day but you certainly don’t have to wait until Sunday to enjoy this Irish Soda Bread. We are having it with imported Irish butter (yes it makes all the difference) and sour cherry jam. Place your orders by tomorrow.

See? It happens to the best of us. These are special pans that really only need a spray of Pam. I’ve done it lots of times before but this time, no bueno. It still tastes good. We will just have to eat it with a spoon lol

Tirimasu. When it’s good, it’s sooooo good. This was soooo good. :). Most recipes call for rum or cognac but in Italy they use a good Marsala wine. I wanted it to be as authentic as I could make so I used a great port wine. It makes all the difference.

I hope you’re all having fun baking cookies, I know I am. I love America’s Test Kitchen. They test a bunch of products to find the best and this cookie press won their best rating. I buy almost everything they recommend because I think it’s important to have the best tools you can afford to have. It will always make your job easier. I used the cookie gun last night for the first time. It’s great! super easy and affordable. Check amazon.

Happy birthday Sister Gloria. To celebrate we made a southern favorite, Hummingbird cake. The batter is filled with banana and pineapple. Topped with a cream cheese frosting and decorated with coconut and chopped pecans. Delicious!

Happy Feast of the Queenship of Mary. This feast day honors the Virgin Mary as a Queen through her divine son, Jesus Christ, King of the Universe. This is my kind of flower bouquet and I bet it’s yours too. I love these pretty flower cupcake papers. If you’ve ever tried, they’re not great to bake in especially if you’re making chocolate cupcakes because you lose the design after it’s baked. I baked the chocolate cupcakes in plain white paper cups and then plopped them I to the flower cups for a much nicer look.
